Roasted Chili Lime Chicken Legs

Heat broiler. Past chicken dry and season with 1/4 tsp each salt and pepper

Quick Seafood Stew

Heat oil in a large pot on medium
- 2 Tbs olive oil
- 1 bulb fennel, quartered, cored, and thinly sliced
- 1/4 tsp red pepper flakes

- 1 C dry white wine
- 1 14oz can crushed tomatoes
- 2 C low sodium seafood or chicken broth
- 1/2 lb mussels, rinsed

- 1/4 C fresh flat leaf parsley, chopped

Herb-infused mashed potatoes

Place potatoes in large pot, add enough cold water to cover and bring to a boil
- 4lbs golden potatoes (about 8), peeled and quartered

- 2 C heavy cream or half and half
