Beef Fettuccine Dinner

In a large skillet, cook the beef over medium heat until no longer pink; drain
- 1 Lb ground beef
- 1-1/2 C water
- 1 pkg (4.3 oz) fettuccine and beef-flavored sauce mix
- 1 can (8oz) tomato sauce
- 2 tsp chili powder
- 1 can (11oz) whole kernel corn, drained
- 1 C (4 oz) shredded cheddar cheese, divided
Chicken-Fried steak with gravy

Season the steaks with salt and pepper
- 4 beef round steaks (1.5lbs), patted dry
- Salt and pepper
- 1 C flour
- 2 large eggs
- 1/2 C vegetable oil
- 2 TB butter
- 1 C chicken broth
- 3/4 C milk
Chicken Chorizo Gumbo

Cook chorizo in a 4-6 qt Dutch oven over medium heat until a thin layer of fat forms
- 8 oz Spanish chorizo, thinly sliced
- 12 oz okra, sliced, or 2 C frozen cut okra
- 2 stalks celery, chopped
- 1 green pepper, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/2 C canola oil
- 1/2 C all purpose flour
- 4 C reduced sodium chicken broth
- 2 (14.5 oz) cans stewed tomatoes, undrained
- 12 oz skinless, boneless chicken thighs
- 1 TB smoked paprika
Italian Chicken Parmigiana

Between sheets of plastic wrap or waxed paper, flatten each chicken breast half to 1/4" thickness
- 4 boneless skinless chicken breast halves
- 1/3 C Italian style dry bread crumbs
- 1/3 C grated parmesan cheese
- 1 egg
- 2 TB vegetable oil
- 2 C tomato sauce (from a 29 oz can)
- 1 C diced tomatoes, drained.(from a 14.5 oz can)
- 1 tsp Italian seasoning
- 1/4 tsp garlic powder
- 1 TB balsamic vinegar
- 1/2 C (2oz) shredded mozzarella cheese
Oven Fried Chicken

Place the chicken in a large resealable plastic bag set in a baking dish
- 3 lbs bone-in chicken, skin removed (breasts halved crosswise)
- 2 C dill pickle juice (from a 32 oz jar of pickles)
- 2 lg eggs
- 1 Tbs Dijon mustard
- 2 C rice crispy cereal
- 1/2 C vegetable oil
- 1 C panko bread crumbs
- Salt and pepper
- 1 tsp garlic powder
- 1 tsp celery seeds
- 1 tsp dried dill
- Ranch dressing for serving.
Classic Fried Chicken

Season chicken generously with salt and pepper
- 3 lbs skin-on, bone-in chicken parts(breasts halved crosswise)
- Salt and pepper
- 3 1/3 C buttermilk
- 2 TB hot sauce
- 2 tsp yellow mustard
- 6 cloves garlic, smashed
- 1 onion, sliced into 1/2" rings
- 3 C all purpose flour
- 1 TB baking powder
- 1TB sweet paprika
- 2 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- Vegetable oil, for frying (4-5 cups)

Beat cream cheese, butter and vanilla in a large bowl with electric mixer on medium speed until well blended
- 1 pkg (8oz) Philadelphia cream cheese, softened
- 1/4 C (1/2 stick) butter or margarine, softened
- 1 tsp vanilla
- 1 pkg (16 oz) powdered sugar (about 4 cups sifted)
Brownie Cheesecake

Preheat oven to 325*. Spray 13x9 inch baking pan with cooking spray
- 1 pkg (19-21 ozs) brownie mix (13x9"pan)
- 4 pkgs (8oz) Philadelphia cream cheese, softened
- 1 C sugar
- 1 tsp vanilla
- 1/2 C sour cream
- 3 eggs
- 2 squares baker's semi sweet baking chocolate
Baked Crab Rangoon

Preheat oven to 350*. Mix crabmeat, neufchâtel cheese, onions and mayo
- 1 can (6oz) white crabmeat, drained, flaked
- 4 oz. (1/2 of 8 oz package) Philadelphia neufchâtel cheese, 1/3 less fat than cream cheese, softened
- 1/4 C thinly sliced green onions
- 1/2 C Kraft light mayonnaise
- 12 wonton wrappers
Molton Chocolate Cake

Preheat oven to 425*. Grease 6 (6oz) custard cups or souffle dishes
- 1 pkg (6 squares) baker's bittersweet baking chocolate
- 10 Tbs butter
- 1 1/2 C powdered sugar
- 1/2 C flour
