Pumpkin Pie

The Cooks Illustrated version
- DOUGH:
- 1-1/4 C (6-1/4 oz.) unbleached all-purpose flour
- 1/2 tsp salt
- 1 Tbsp sugar
- 6 Tbsp (3/4 stick) cold unsalted butter, cut into 1/4-inch slices
- 1/4 C cold vegetable shortening, cut into 2 pieces
- 2 Tbsp cold vodka
- 2 Tbsp cold water
- FILLING:
- 1 C heavy cream
- 1 C whole milk
- 3 large eggs plus 2 large egg yolks
- 1 tsp vanilla extract
- 1 (15-oz) can pumpkin puree
- 1 C drained candied yams from 15-oz can
- 3/4 C sugar
- 1/4 C maple syrup
- 2 tsp grated fresh ginger (I use 1-1/2 tsp)
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp table salt
Gourmet Chicken Marsala

This was the "Better Chicken Marsala" recipe that America's Test Kitchen introduced in 2016
- 2-1/4 C dry Marsala
- 4 tsp unflavored gelatin
- 1 oz. dried porcini mushrooms, rinsed
- 4 (6- to 8-oz) boneless, skinless chicken breasts, trimmed
- Kosher salt and pepper
- 2 C chicken broth
- 3/4 C all-purpose flour
- 1/4 C plus 1 tsp vegetable oil
- 3 oz. pancetta, cut into 1/2-inch pieces (I don't do pork so I substitute a few dashes of Liquid Smoke)
- 1 lb cremini mushrooms, trimmed and sliced thin
- 1 shallot, minced
- 1 Tbsp tomato paste
- 1 garlic clove, minced
- 2 teaspoons lemon juice
- 1 tsp fresh oregano
- 3 Tbsp unsalted butter, cut into 6 pieces
- 2 tsp minced fresh parsley
Apple Pie Muffins

- TOPPING:
- 1/2 C packed brown sugar
- 1/3 C all-purpose flour
- 1 tsp cinnamon
- 2 Tbsp butter, melted
- BATTER:
- 2-1/4 C all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1 C buttermilk
- 1/2 C butter, melted
- 1 tsp vanilla
- 1-1/2 C packed brown sugar
- 2 C diced apples
Mushroom Barley Soup

This came from the New York Times food blog "Bitten
- 1 oz dried porcini mushrooms (about 1 cup)
- 2 Tbsp olive oil
- 1/4 lb shiitake or button mushrooms, stemmed and roughly chopped
- 3 medium carrots, peeled and sliced
- 1 C pearl barley
- Salt and pepper
- 1 bay leaf
- 3 C vegetable stock
- 1 Tbsp soy sauce
- (Some also added some garlic and/or a few Tbsp of dry sherry vinegar as well)
Sauteed Green Beans with Garlic and Herbs

- 1 Tbsp unsalted butter, softened
- 3 garlic cloves, minced
- 1 tsp minced fresh thyme
- 1 tsp olive oil
- 1 lb green beans, trimmed and cut into 2-inch pieces
- Salt and pepper
- 1/4 C water
- 2 tsp fresh lemon juice
- 1 Tbsp chopped fresh parsley
Heidi's Turkey Stuffing

- 1/2 C onion, chopped
- 1-1/2 C finely chopped celery
- 1 C margarine or butter
- 7 C bread cubes (crust off)
- 3 C finely chopped Granny Smith apples
- 3/4 C raisins
- 1 Tbsp salt
- 1-1/2 tsp fresh (I think) sage
- 1 tsp fresh (I think) thyme
- 1/2 tsp ground black pepper

1. Set a rack in the middle level of the oven and preheat to 350 degrees
- 1-3/4 C all-purpose flour
- 2/3 C alkalized (Dutch process) coca powder
- 2 tsp baking powder
- 1/2 tsp salt
- 1-1/4 C sugar
- 2/3 C (about 3 ounces) walnut pieces (or almonds), coarsely chopped
- 6 large egg whites
- 2 tsp vanilla extract

- 1/2 C coarsely chopped walnuts
- 1 Tbsp red wine vinegar
- 1/2 C walnut oil
- 1 garlic clove, lightly crushed
- 1/4 tsp salt
- 1/8 tsp freshly ground white pepper
- 2 heads of Bibb lettuce, torn into bite-size pieces
- 2 bunches of arugula, large stems removed, torn into bite-size pieces
- 3 ripe pears, cored and sliced
- 4 oz mild, creamy goat cheese, cut into 8 rounds
