Cheese Fondue

From Food Network. It worked nicely
- 1/2 lb imported Swiss cheese, shredded
- 1/2 lb Gruyere cheese, shredded
- 2 Tbsp cornstarch
- 1 garlic clove, peeled
- 1 C dry white wine
- 1 Tbsp lemon juice
- 1 Tbsp cherry brandy, such as kirsch
- 1/2 tsp dry mustard
- Pinch nutmeg
- Assorted vegetables (red pepper, carrot, broccoli, cauliflower, snap peas, asparagus, green beans, etc.), bread, and apples for dipping
Buttermilk Baked Chicken

- 1 (1-oz) envelope ranch seasoning mix
- 1 Tbsp salt
- 3 lbs bone-in chicken pieces, skin and excess fat removed
- 5 slices hearty white sandwich bread, torn into pieces
French Onion Soup (Cooks Illustrated)

- SOUP:
- 4 lbs onions, halved and sliced through the root end into 1/4-inch-thick pieces
- 3 Tbsp unsalted butter, cut into 3 pieces
- Salt and pepper
- 2 C water, plus extra for deglazing
- 1/2 C dry sherry
- 4 C chicken broth
- 2 C beef broth
- 6 sprigs fresh thyme, tied with kitchen twine
- 1 bay leaf
- CHEESE CROUTONS:
- 1 small baguette, cut into 1/2-inch slices

- 1-1/2 C fresh bread crumbs
- 3 Tbsp olive oil
- 1-1/4 C grated Parmesan cheese
- 1/4 C chopped fresh basil
- 2 cloves garlic, minced
- 1 (28-oz) can crushed tomatoes
- Salt and pepper
- 1/2 C all-purpose flour
- 4 boneless, skinless chicken breasts (1-1/2 lbs), halved horizontally
- 3 Tbsp vegetable oil
- 3/4 C shredded mozzarella cheese
- 3/4 C shredded provolone cheese

- 4 (5-ounce) skinless, boneless chicken breasts
- 1/2 tsp salt
- 1/8 tsp black pepper
- 2 tsp olive oil
- 12 (or 24) oz sliced mushrooms
- 1 (or 2) large shallot, finely chopped
- 2 (or 4) garlic cloves, minced
- 1/2 (or 1) C dry Marsala wine (I used sweet Marsala wine and it was excellent as well)
- 1/2 (or 1) C reduced-sodium chicken broth
- 2 tsp fresh thyme (I used 1 or 2 tsp dried thyme)
