In a large bowl, whip cream until stiff peaks are just about to form
- 1 C heavy cream
- 1 tsp vanilla extract
- 1 Tbsp confectioners' sugar

- TOPPING
- 4 Granny Smith or Golden Delicious apples (about 2 pounds), peeled and cored
- 4 Tbsp (1/2 stick) unsalted butter, cut into 4 pieces
- 2/3 C packed (4-2/3 ounces) light brown sugar
- 2 tsp fresh lemon juice
- CAKE
- 1 C (5 ounces) unbleached all-purpose flour
- 1 Tbsp cornmeal (optional)
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 C (5-1/4 ounces) granulated sugar
- 1/4 C packed (1-3/4 ounces) light brown sugar
- 2 large eggs
- 6 Tbsp (3/4 stick) unsalted butter, melted and cooled slightly
- 1/2 C sour cream
- 1 tsp vanilla extract
- 1 tsp finely grated lemon zest
- 1 tsp finely minced fresh thyme

- 1 C kosher salt
- 1/2 C light brown sugar
- 1 gallon vegetable stock
- 1 Tbsp black peppercorns
- 1-1/2 tsp allspice berries
- 1-1/2 tsp chopped candied ginger
- 1 gallon heavily iced water
- AROMATICS
- 1 red apple, sliced
- 1/2 onion, sliced
- 1 cinnamon stick
- 1 C water
- 4 sprigs rosemary
- 6 leaves sage
- Canola oil
