Dutch Apple Pie with Sour Cream Custard

- FOR PIE:
- 1 Single-crust, blind-baked All-Butter Pie Dough shell (see separate recipe)
- 2 C (263 g) apples, peeled and chopped into 1/2-inch square pieces
- 1/2 C plus 2 Tbsp (126 g) granulated sugar
- 2 Tbsp (18 g) all-purpose flour
- 1/2 tsp kosher salt
- 1 C (242 g) sour cream
- 1 large egg
- 1 tsp (5 g) vanilla paste
- FOR WALNUT STREUSEL
- 1 C (142 g) all-purpose flour
- 3/4 C (75 g) finely chopped walnuts
- 1/2 C (100 g) granulated sugar
- 1/2 C firmly packed dark brown sugar
- 1 tsp ground cinnamon
- Pinch kosher salt
- 6 Tbsp unsalted butter, melted
Thai-Roasted Tofu with Chili and Basil

- 1 lb extra-firm tofu, sliced into six 1/2-inch slices
- 2 sprays cooking spray
- 3 Tbsp low-sodium soy sauce
- 2 tsp olive oil
- 2 Tbsp minced fresh ginger root
- 2 tsp minced garlic (about 1 large clove)
- 1/2 C shiitake mushrooms, roughly chopped
- 1 oz green hot chili pepper(s), Thai-variety, thinly sliced (use 1 small pepper) I actually used a Jalapeño -- no Thai peppers at the market that day)
- 1 small sweet red pepper, sliced into 1/4-inch pieces
- 1 C uncooked string beans, trimmed and cut in half
- 2 Tbsp teriyaki sauce
- 1/4 C fresh basil (Thai or Italian), torn, plus a few more whole leaves for garnish
- 2 Tbsp scallions, thinly sliced (for garnish)
- 2 C cooked brown rice

- For Mornay Sauce:
- 2 bags baby spinach - (6 oz ea)
- 1/4 C butter (1/2 stick), divided
- 1 onion, minced
- 3 Tbsp flour
- 3/4 C chicken or vegetable broth
- 1 C milk
- Salt to taste
- Freshly-ground black pepper to taste
- 1 C bread crumbs
- 1 Tbsp white vinegar
- 6 eggs
- 6 thick slices French bread, toasted
- 1 Tbsp butter
- 11/2 Tbsp all-purpose flour
- 1 C milk
- 1/8 tsp salt
- 1 pinch freshly-grated white pepper
- 1 pinch freshly-grated nutmeg
- 1 oz grated cheese (Swiss, Gruyere, or Emmenthaler)
