Thai-Style Chicken with Basil

- 2 C fresh basil leaves, tightly packed
- 3 medium garlic cloves, peeled
- 6 green or red Thai chiles, stemmed (can substitute 2 serranos or 1 medium jalapeño, if necessary)
- 2 Tbsp fish sauce, plus extra for serving
- 1 Tbsp oyster sauce
- 1 tsp white vinegar, plus extra for serving
- 1 Tbsp sugar, plus extra for serving
- 1 lb boneless chicken breast, cut into 2-inch pieces
- 3 medium shallots, peeled and thinly sliced (3/4 cup)
- 2 Tbsp vegetable oil
- Red pepper flakes, for serving

- 2 Tbsp sesame seeds, raw (You might want to increase this amount if you like a lot of sesame seeds -- I found I ran low by the end of the recipe.)
- 1 Tbsp water
- 1 Tbsp low-sodium soy sauce
- 1 Tbsp maple syrup
- 1 Tbsp dry sherry
- 1 tsp ginger root, fresh, minced
- 1/2 tsp Chinese five-spice powder

- 1-1/2 lbs cipollini onions (you can substitute larger shallots if you can't find the cipollini onions, but it's not nearly as good)

- 1 1/2 C plus 2 Tbsp unbleached all-purpose flour
- 4 1/2 C unbleached bread flour
- 2 Tbsp plus 2 tsp extra-virgin olive oil, plus more for topping the loaf
- 2 Tbsp plus 2 tsp milk
- 1 Tbsp plus 1 1/4 tsp kosher salt, plus more for greasing and topping the loaf
