- 3-1/2 tsp baking powder
- 1 tsp salt
- 1 Tbsp white sugar
- 1 -1/4 C milk
- 1 egg
- 3 Tbsp butter, melted
Skillet-Roasted Brussels Sprouts (with various additions)

- Substitute following for lemon juice:
- 1 lb small (1 to 1-1/2 inches in diameter) Brussels sprouts, trimmed and halved
- 5 Tbsp extra-virgin olive oil
- Salt and pepper
- FOR LEMON AND PECORINO ROMANO VERSION
- 1 Tbsp lemon juice
- 1/4 C shredded Pecorino Romano cheese
- FOR CIDER VINEGAR AND HONEY VERSION
- Omit Pecorino.
- 2 tsp cider vinegar
- 2 tsp honey
- 1/4 tsp red pepper flakes
- FOR MAPLE SYRUP AND SMOKED ALMONDS VERSION
- Substitute for lemon juice:
- 1 Tbsp maple syrup
- 1 Tbsp sherry vinegar
- Substitute for Pecorino:
- 1/4 C smoked almonds, chopped fine
- FOR POMEGRANATE AND PISTACHIOS VERSION

- 1 Tbsp pomegranate molasses
- 1/2 tsp ground cumin

- FOR GOCHUJANG AND SESAME SEEDS VERSION
- Substitute for lemon juice:
- 1 Tbsp gochujang

Five-Bean Vegetarian Chili

This is a recipe I cut out of the Chicago Tribune, and we were pleasantly surprised at how good it was
- 3 Tbsp olive oil
- 2 ribs celery, chopped
- 1 each, chopped: sweet onion, red bell pepper, and green bell pepper (we used one orange and one red bell pepper, actually)
- 3 cloves garlic, minced
- 2 each, finely chopped: drained chipotle peppers, oil-packed sun-dried tomatoes
- 1 28-oz can crushed tomatoes
- 1 can (about 16 oz) each, drained: black beans, garbanzo beans, red kidney beans, white kidney beans, cannelini or butter beans
- 1 14-oz can vegetable broth
- 2 C water
- 1 Tbsp chili powder
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp each: salt, dried thyme leaves, red pepper flakes
- Freshly ground black pepper
Megan's Lasagna

Our good friend Megan gave us this recipe back in 2001
- 2 pkgs frozen cheese ravioli (maybe 12 oz. packages?) -- the bigger the ravioli squares the better. (This is also good with mushroom ravioli!)
- 1 or 2 cans of tomato sauce (Do NOT scrimp!)
- A good amount of shredded mozzarella cheese (Read the directions to gauge how much)
- 1 bunch of fresh spinach
- Some amount of mushrooms, sliced
- A good helping of grated parmesan cheese

- 1 lb boneless, skinless chicken breasts, cut into 1-inch squares
- 2 Tbsp vegetable oil or olive oil
- 1 medium onion, minced
- 3 medium cloves garlic, minced or pressed through a garlic press
- 1/4 tsp dried oregano
- 1/8 tsp red pepper flakes
- 8 oz ziti
- 2-3/4 C water
- 1-2/3 C low-sodium chicken broth
- 12 oz broccoli florets (about 4 cups)
- 1/4 C oil-packed sun-dried tomatoes, rinsed and chopped coarse
