- 2 Hass Avocados from Chile
- 1 cup nonfat sour cream
- 1/4 cup chopped parsley or cilantro
- 2 lemons or limes, zested and juiced
- 3 cloves garlic, minced
- Salt to taste
Tarpan Springs Stuffed Mushrooms

Preheat oven to 350 degrees
- 1 (10 ounce) package frozen chopped spinach
- 1/2 cup Parmesn cheese, freshly grated
- 4 ounces Feta cheese, rinsed and crumbled
- 1/2 cup green onion, finely chopped
- 1/2 cup parsley, finely chopped
- Salt to taste
- 24 large fresh mushrooms, cleaned and stemmed
Ricotta and Sausage Filled Ravioli

In a food processor, pulse together the onion, celery and carrot until finely chopped
- 1 small onion, quartered
- 1 small stalk celery cut in chunks
- 1 small carrot, cut in chunks
- 3 tablespoons extra-virgin olive oil
- 12 ounces sweet Italian sausage without fennel seeds, removed from the casings
- 1/4 cup dry white wine
- 1 cup fresh ricotta, drained
- 1/4 cup grated Grana Padano or Parmigiano-Reggiano
- 1/4 cup chopped fresh Italian parsley
- 1 recipe pasta dough (see recipe)
- 2 cups all-purpose flour, plus more for working the dough
- 2 large whole eggs
- 1/4 cup extra-virgin olive oil
- 3 tablespoons water

Caramel Orange Buttermilk Syrup

This Caramel Orange Buttermilk Syrup is super easy and quick to make, following a few simple steps
- 1 stick (1/2 cup) unsalted butter
- 3/4 cup brown sugar
- 3/4 cup white granulated sugar
- 3/4 cup buttermilk
- 2 tablespoons corn syrup
- 1 teaspoon baking soda
- 2 teaspoons orange zest, freshly grated
- 2 tablespoons frozen orange juice concentrate (or 2 tablespoons fresh orange juice plus 1/2 to 1 teaspoon orange extract)
- 2 teaspoons good quality vanilla extract
Sliced Garlic Baked Potato

I don’t know who first came up with the idea for sliced baked potatoes, but it’s a great one
- 4 Yukon gold potatoes, cleaned
- 2 large cloves of garlic, sliced very thinly (I use a mandolin)
- 6 tablespoons butter
- Fine sea salt
- Coarsely-ground black pepper
- 1/8 cup grated Parmigiano-Reggiano cheese
- 1/4 cup grated Asiago Fresco cheese
- 1/4 cup grated aged cheddar cheese
- Chopped fresh chives or thinly-sliced green onions
Essence of Orange Muffins

To Make the Muffins: Preheat the oven to 350 degrees
- Muffins:
- 1 cup milk
- 1/2 cup freshly squeezed orange juice
- 1/2 cup sour cream
- 2 large eggs
- 1 cup unsalted butter, melted and slightly cooled
- 3 1/2 cups flour
- 1 cup sugar
- 1 1/2 tablespoons baking powder
- 1/2 teaspoon salt
- zest of 1 orange, preferably organic
- Orange Glaze:
- 1/4 cup freshly squeezed orange juice
- 1 1/2 cups powdered sugar
- 1 teaspoon grated orange zest
