Red Quinoa Chicken Salad

I think this is one of my best creations
- DRESSING:
- 3 cups red quinoa, cooked and chilled
- 1 roasted chicken, deboned and chopped
- 2 cups red and green grapes cut in half
- 1 bundle scallion, chopped
- 1 red bell pepper, chopped finely
- 1 cup mango cubed
- 1/4 cup fresh herbs basil and thyme are good
- 2 cups greek yogurt
- 1 tablespoon Dijon style mustard
- 1/2 teaspoon fresh cardamom
- 1/4 cup Xagave
- 1 tablespoon aged balsamic vinegar
- Salt and pepper
Katie Lee's Black Bean, Avocado and Mango Salsa

Mix all ingredients in a bowl
- 1 15-ounce can black beans, rinsed and drained
- 1 mango, diced
- 1 avocado, diced
- 2 garlic cloves, minced
- Juice of 1/2 lime
- 1/2 jalapeño, seeds and membranes removed, minced (if you like it spicier, use the whole jalapeño)
- 1/4 cup cilantro, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Orange Cream Pop Cupcakes

Orange cream pop cupcakes are just as good a a orange cream popsicle! They taste so good they will have you coming
- 1 (3 ounce) package orange-flavor gelatin
- 1 (2 layer size) package white cake mix
- 1 (4 serving size) package cheesecake instant pudding and pie filling mix
- 1 1/4 cups orange juice
- 4 eggs
- 1/3 cup vegetable oil
- 1 teaspoon vanilla
- 1 recipe Cream Pop Frostings
- Wooden craft sticks, optional
- CREAM POP FROSTING
- 1 recipe Cream Cheese Frosting
- 1/4 teaspoon vanilla
- 1 teaspoon finely shredded orange peel
- Few drops orange food coloring, optional
- CREAM CHEESE FROSTING
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup butter, softened
- 2 teaspoons vanilla
- 6 cups powdered sugar
Sweet Apple and Cheese Barley Salad

Barley makes the most wonderful salads
- For the Salad:
- 2 apples, diced with seeds and core
- 1/4 cup golden raisins
- 1/2 cup apricot cheese, cubed OR any speciality cheese
- 2 to 3 cups Barley, cooked (pressure for 20 minutes)
- 1 pint raspberries
- 3/4 cup walnuts, pieces
- 1 head of leaf lettuce
- Sweet Red Wine Vinegar Dressing:
- 2 T. red wine vinegar
- 1 clove garlic, minced
- 1 t. salt
- 2 T. sugar
- 1 t. Dijon mustard
- 1/3 cup extra virgin olive oil
- 1/3 cup xagave syrup
No-Knead Chewy Sandwich Rolls

- 4 cups King Arthur Unbleached All-Purpose Flour
- 2 teaspoons salt
- 1 teaspoon instant yeast
- 3 tablespoons Baker's Special Dry Milk or nonfat dry milk powder
- 1 1/2 cups cool water
- 1/4 cup olive oil
Best Ever Carmel Cake

1. Preheat oven to 350. 2
- CAKE:
- 1 cup whole milk
- 4 large egg whites at room temperature
- 2 1/4 tps. pure vanilla extract
- 1 1/2 cups sugar
- 3 cups sifted cake flour
- 4 tsp. baking powder
- 3/4 tsp. salt
- 1 1/2 sticks unsalted butter, cut into tablespoons, softened
- 3/4 cup heavy cream
- ICING:
- 3 cups sugar
- 3 tbsp. light corn syrup
- 1 1/2 cups whole milk
- 1 tsp. pure vanilla extract
- 1 stick unsalted butter, softened
- 1/2 cup heavy cream
Oatmeal Chocolate Chip Walnut Cookies

Chocolate chip cookies are the best comfort food
- Add in:
- 1 cup butter, softened
- 2 cups brown sugar
- In mixer with cookie paddle attachment, start by creaming these together.
- 1 t. vanilla
- 2 eggs
- Continue to cream together.
- Add in:
- 1 cup whole rolled oats
- 3 1/2 cups freshly ground oat flour
- 1 t. baking soda
- 1 t. salt
- Mix until all ingredients are combined.
- Add in:
- 2 cups chopped walnuts
- 2 cups chocolate chips or 2 cups heath bar pieces
English Muffin Toastable Bread

- 5-1/2 cups Warm (not Hot) Water
- 2 Tablespoons Kosher Salt
- 2 Tablespoons Sugar
- 3 packages (1/4 Oz. Packet) Instant Yeast
- 11-1/2 cups All Purpose Or Bread Flour (I Like To Do A Half And Half Blend Most Times.)
- Melted Butter For Brushing The Bread Midway Through Cooking And Then Again After They're Done Cooking
Lemon Chicken

Coat the chunked chicken lightly in flour, seasoned with a little salt
- 1 1/2 pounds chicken breast or chicken tenders, cut into chunks
- 1/4 cup all-purpose unbleached flour
- Coarse salt
- 2 tablespoons wok or vegetable oil, 2 turns of the pan (preferred brand: House of Tsang)
- 1 tablespoon (a splash) white or rice wine vinegar
- 1/2 cup chicken broth or stock
- 8 ounces (1 cup) prepared lemon curd
- 1/4 cup hot water
- 1 lemon, zested
- 2 scallions, thinly sliced or 20 blades fresh chives, finely chopped
Beef Jerky - Brian's Favorite

- 5 pounds beef brisket or London Broil
- 20 ounces Soy Sauce
- 15 ounces Lea & Perrins Worcestershire Sauce
- 20 ounces Teriyaki sauce
- 1/4 cup Dark Brown Sugar
- 1/4 cup Garlic Powder
- 1/4 cup Onion Powder
- 2 teaspoons Cayenne Pepper
- 5 ounces Liquid Smoke flavoring, Hickory Smoke is best
- 1/2 cup Molasses
