- 1 cups (plus) white flour
- 3 cups brown rice flour
- Kosher salt
- 1 1/4 cups boiling water
- 1 tablespoon sesame oil
- 1/2 cup sliced scallions
- Peanut oil for frying
Waldorf Salad

Waldorf salads are great, but they reach true greatness when you add a grain
- Dressing:
- 6 apples chopped
- 1 cup dried cranberries
- 1-2 cups cooked black quinoa
- 1 can butter beans
- 1 Mexican papaya, seeded and diced
- 3 cups fruit cocktail, drained, reserving juice
- 1 cup walnuts
- An amount of reserved juice
- 1 cup mayonnaise
- 1/4 cup lemon juice
- 1/4 cup total omega swirl flax oil
- 1/4 cup sugar
- Dash of salt
Cucumber Salad

Place the vinegar, sugar, and salt in a nonreactive mixing bowl and whisk until the sugar and salt dissolve
- 3 tablespoons rice vinegar or distilled white vinegar
- 1 tablespoon sugar
- 1/2 teaspoon coarse salt (kosher or sea)
- 2 Kirby (pickling cucumbers), peeled and very thinly sliced
- 1/4 medium onion, thinly sliced crosswise
Perfect Macaroni and Cheese

1. Heat the oven to 375 degrees
- 6 slices good-quality white bread, crusts removed, torn into 1/4- to 1/2-inch pieces
- 8 tablespoons (1 stick) unsalted butter, plus more for dish
- 5 1/2 cups milk
- 1/2 cup all-purpose flour
- 2 teaspoons kosher salt
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon cayenne pepper
- 4 1/2 cups (about 18 ounces) grated sharp white cheddar
- 2 cups (about 8 ounces) grated Gruyere or 1 1/4 cups (about 5 ounces) grated pecorino Romano

- 1-1/2 stick (3/4 Cup) Cold Butter, Cut Into Pieces
- 1-1/4 cup Butermilk
- SAUSAGE GRAVY:
- 1 pound Breakfast Sausage, Hot Or Mild
- 1/3 cup All-purpose Flour
- 4 cups Whole Milk
- 1/2 teaspoon Seasoned Salt
- 2 teaspoons Black Pepper, More To Taste
Slow-Cooker Boston Baked Beans

Classic Boston baked beans are made with salt pork, a common ingredient in many New England dishes
- SOAK:
- 1 lb. dry great Northern beans
- 6 cups water
- 1/2 tsp. baking soda
- COOK:
- 4 oz. salt pork, trimmed of rind, cut into 1/2-inch cubes
- 2 cups diced onion
- 2 tsp. minced garlic
- COMBINE:
- 1/2 cup pure maple syrup, divided
- 1/3 cup molasses
- 1 Tbsp. dry mustard
- 1 tsp. ground ginger
- 1/8 tsp. ground cloves
- STIR IN:
- 1 Tbsp. cider vinegar
- Salt and black pepper to taste
