Southwest Salad

1 Mix all salad ingredients together in large serving bowl
- bagged lettuce, preferably hearts of romaine
- 2 roma tomatoes, chopped
- 2/3 cup sharp cheddar cheese, GRATED
- 2/3 cup corn
- 2/3 cup tortilla chips, crushed
- Dressing
- 1 cup ranch dressing, from bottle
- 1/4 cup salsa
- 1/4 teaspoon chili powder
- 1/4 teaspoon cumin
Raspberry Sauce from a Jam

Directions: 1 Pour jam and water into medium-sized saucepan over low-medium heat

Boston Baked Beans

Soak beans overnight in cold water
- 4 lbs. dried pea beans
- 10 qts. cold water
- 6 tbsp. salt
- 1 tsp. black pepper
- 1 tsp. Accent
- 1 tsp. ginger
- 1 tsp. dry mustard
- 5 oz. lightly packed brown sugar (1 cup)
- 1 cup molasses
- 1 1/4 cup finely chopped onion
- 1 1/2 lbs. salt pork (cut in squares and 1/4 inch thick)
Pepper Jelly Rugelach

Preheat oven to 350 degrees and cover two baking sheets with parchment paper
- cream cheese pastry
- 1 cup all-purpose flour
- 8 tablespoons (1 stick) cold unsalted butter, cut into 12 pieces
- 4 ounces cold cream cheese, cut into 12 pieces
- 1/8 teaspoon salt
- filling
- 1/4 cup plus 2 Tablespoons jalapeno jelly
- 1/2 cup chopped toasted pecans
- 1/4 cup sugar
- 1 teaspoon grated lemon zest

- 1 egg
- 1/4 cup sugar
- 1/4 cup chopped toasted pecans
Watergate Salad

Directions Mix all ingredients and fold in whipped topping
- 1 20-oz. can crushed pineapple
- 1 pkg. instant pistachio pudding
- 1/2 C. chopped walnuts, pecans, or shaved almonds
- 1/2 C. miniature white marshmallows
- 8-oz. whipped topping - such as Cool Whip

- 1 tablespoon whole black peppercorns

Sour Cream Pie

Mix the sour milk and sugar; add yolks, spices, salt and raisins
- 2 egg yolks
- 1 cup sour milk (add 1 Tablespoon vinegar or lemon juice to milk)
- 1/2 cup sugar
- 1/2 cup yellow raisins
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt

Honey Mustard Sauce

- 8 parts mayonnaise
- 2 parts Heinz mustard
- 1 part sugar

- 4 Ounces Cream Cheese, at room temperature
- 2 Tbsp Sour Cream
- 1 Tsp Dijon Mustard
- 1 Tsp Prepared Horseradish
- 1 Tbsp Chopped Parsley
- 2 Tbsp Finely Diced Red Onion
- 1/2 Tsp Dillweed
- 1/4 Tsp Grated Lemon Peel
- 1/4 Tsp Ground Black Pepper
- 4- 6 Inch Diameter Flour Tortillas
- 4 Ounces Smoked Salmon, thinly sliced
- 1 Small Cucumber, Peeled, Seeded, thinly sliced
- Garnish- Watercress and Lemon Slices
Fish In Beer Batter

- 1 t baking powder
- 1/2 t dried dill
- 3/4 cup flat beer
- 1/2 cup milk
- 2 eggs
- 1-1/2 to 2 lbs. skinless fish fillets, cut into chunks
- vegetable oil for deep frying
