Slow Cooker Chicken Piccata

In a large resealable plastic bag, add flour, salt and black pepper
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon coarse black pepper
- 1/3 cup butter
- 4 1/2 to 5 pounds chicken breasts with bone and skin
- 2/3 cup dry white wine
- 1/2 cup fresh lemon juice
- 1/2 cup chicken broth
- 1/2 cup capers, rinsed and drained
- 2 tablespoons water
- 1 1/2 tablespoons cornstarch
- Lemon slices
Cherry Cream Cheese Strudel

Preheat oven to 200C/375F
- 1 Lime, zest and juice
- 300 g Cherries, pitted and roughly chopped, or use other stonefruit or berries
- 100 g Cream cheese
- 100 g Ricotta cheese
- 3 Tbsp Caster sugar
- 2 Free range egg yolks
- 7 sheets Filo pastry
- 1/4 cup Melted butter
Pork Loin Sandwich

Directions Melt butter or margarine in a large saucepan over medium heat
- 1/4 cup butter
- 1/4 cup Worcestershire sauce
- 2 tablespoons lemon juice
- 2 tablespoons white sugar
- 1/4 teaspoon paprika
- 1/8 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/2 pound boneless pork, cooked and cubed
- 4 hamburger buns
Any Fruit Casserole

Melt sticks of butter. Pour into a large glass casserole dish
- 2 c. flour
- 2 c. sugar
- 4 tsp. baking powder
- 1 1/2 c. milk
- 2 sticks butter
Cherry Enchiladas

Other fruit fillings can be used, including fillings made from fresh fruit
- 2 cups sugar
- 1-1/2 cups water
- 1 cup butter, cubed
- 2 tablespoons lemon juice
- 1 can (21 ounces) cherry, apple or blueberry pie filling
- 16 flour tortillas (6 inches)
- 1 cup chopped pecans
- 1 teaspoon ground cinnamon
- Vanilla ice cream
Creole Tomato Bread

Add all ingredients into the bread pan, in the order suggested by the manufacturer
- Add these at beep:
- 2/3 cup V-8 veg. juice -- heated
- 1 tablespoon Vegetable oil
- 2 teaspoons Molasses
- 1/2 cup Tomato soup -- canned + 1 tb
- 1 Egg
- 2 3/4 cups Bread flour
- 2 tablespoons Gluten
- 1 1/4 teaspoons Garlic salt
- 1 teaspoon Chili powder
- 1 teaspoon Paprika
- 1/8 teaspoon Baking soda
- 1/8 teaspoon Cayenne pepper
- 1 package Yeast
- 1/2 cup Mushrooms -- fresh/sliced
- 1/4 cup Celery -- fine chopped
- 1/4 cup Red bell pepper -- fine chopped
- 2 tablespoons Pimentos -- drained/diced
- 1 tablespoon Minced onion -- dried
Saucy French Chicken with Peaches

1. Coat a large frying pan with oil and set over medium-high heat
- 1 tbsp
- (15 mL) olive oil
- 4 skinless, boneless chicken breasts
- Generous pinches of salt
- 3 unpeeled peaches, cut into wedges
- 1 shallot, finely chopped
- 1/2 cup (125 mL) white wine or dry vermouth
- 2 tbsp (30 mL) grainy mustard or 1 tbsp (15 mL) Dijon mustard
- 1/2 cup (125 mL) whipping cream or sour cream
- 1/3 cup (75 mL) snipped chives or fresh dill

- 1/2 apple, such as Granny Smith or honey crisp, peeled, cored, and coarsely chopped
- 3 tablespoons apple cider vinegar
- 1 tablespoon fresh lemon juice
- 2 tablespoons maple syrup
- 1/3 cup extra-virgin olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 large or 2 small heads frisee lettuce, torn
- 1 large avocado, peeled, seeded, and cut into 1/2-inch cubes
- 1/2 cup chopped walnuts, toasted ( see Cook's Note)

Lemon Fish Casserole

- 4 fish fillets (Hack, sole, or any white fish of your choice)
- 1/2 C. lemon juice
- 1/2 C. chopped onions
- 1 clove garlic, chopped
- 2 C. mushrooms
- 1 full size bag baby spinach
- 2-3 fresh tomatoes, sliced
- 1 C. grated cheese
Pineapple Fried Rice

- 1 cup jasmine rice
- 1 (20 oz.) can pineapple tidbits
- 3 green onions, chopped
- 1 large red bell pepper, finely diced
- 3 sprigs cilantro, coarsely chopped
- 3 T oil, divided
- 2 cups fresh shrimp, peeled and deveined
- 2 cloves of garlic, minced
- 2 T fish sauce
- 2 T soy sauce
- 1 t sugar
- cilantro for garnish
