Shrimp in Creamy Chile and Cilantro Sauce

How to make it Thaw shrimp, if frozen, and remove tails Meanwhile bring your water to boil for pasta, add
- 30 shrimp (I used frozen, thawed of course, the 26-30 per lb. size)
- 2 Tbls. olive oil (more or less)
- 1 Tbls. butter
- 1/2 cup chopped onion (approximately)
- 1 tsp. minced garlic
- 1/2 tsp. (more or less) ancho chile powder
- 1 large fire roasted sweet red pepper, chopped finely (I used jarred)
- 1 4 oz. can fire roasted green chiles (I used the hot ones, they also have mild)
- Dried japone chiles, about 7, soaked in boiling hot water to soften, chopped finely
- HINT*: Wear gloves while handling and don't touch your eyes, remove all or most seeds to make them less hot.
- 1 cup chicken broth (or more depending on how thick or thin you like your sauce)
- 6 oz. cream cheese (I used Philly light)
- 1/2 cup chopped fresh cilantro, leaves only
- 8 oz. (dry) cooked pasta of your choice (I used shells, cuz that's what hubby likes)

How to make it With a fork, poke holes in bottom and sides of pie crust
- 1 prepared 9" deep-dish pie crust
- 4 large eggs
- 2 1/2 cups Colby jack cheese
- 1 (4 oz.) can diced green chiles, drained
- 1 cup half-and-half or light cream
- 1/8 tsp. Menudo Mix seasoning

Cook meat in pineapple juice in pressure cooker for 25 minutes
- 40 lb top round roasts - cut into 3/4 inch cubes
- 5 green bell peppers - cubed
- 5 red bell peppers - cubed
- 5 onions, diced
- 4-20 oz cans pineapple chunks in unsweetened juice-drain juice to cook meat
- soy sauce to taste and look
- 4 cups water (+/-)
- 1 cup lime juice - or to taste
- 1/2 cup lemon juice - or to taste
- pepper to taste

1. Preheat oven to 350°. Using a nonstick vegetable spray, spray a 10-inch fluted quiche pan or pie plate

- 1/2 pound fresh white mushrooms, thinly sliced
- 1/2 pound fresh crimini mushrooms, thinly sliced
- 1/2 pound shiitake mushrooms, thinly sliced
- 1/3 cup dry sherry
- 1-1/3 cups skim milk
- 3/4 cup all-purpose flour, unbleached
- 3 large egg whites
- 1 large egg
- 1/2 teaspoon thyme leaves, crushed
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup Parmesan cheese, freshly grated

PREPARATION: Add all ingredients to pressure cooker and stir
- 2 cups dried brown lentils, rinsed and drained
- 3 cups chicken stock
- 1 bay leaf
- 3 medium carrots, chopped
- 2 stalks celery, chopped
- 1 onion, chopped
- 1/4 Lb cooked ham, cubed
- 1 teaspoon Worcestershire sauce
