Breads: Cranberry, Orange, White Chocolate Scones

- 1 3/4 cups flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup butter, softened
- 1/2 cup sweetened, dried cranberries
- 1/2 cup white vanilla chips
- 1 teaspoon grated orange peel
- 1/2 cup vanilla low-fat yogurt
- 1/3 cup buttermilk (to substitute for buttermilk, use 1 teaspoon vinegar or lemon juice, plus milk to equal 1/3 cup)

Finely chop cranberries in food processor, mix with sugar
- 1 bag (12 oz.) fresh cranberries*
- 1/2 cup sugar
- 1 1/2 cup boiling water
- 1 pkg. (8-serving size) or 2 pkgs. (4-serving size) Jell-O Brand cranberry, orange or lemon
- flavor gelatin
- 1/4 tsp. salt (optional)
- 1 cup cold water*
- 1 Tbs. lemon juice
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground cloves
- 1 orange, sectioned, diced
- 1/2 cup chopped nuts

- CAKE INGREDIENTS:
- 2 2 2 cups sugar
- 1-3/4 1-3/4 1-3/4 cups all-purpose flour
- 3/4 3/4 3/4 cup HERSHEY'S Cocoa, (or other brand of unsweetened powdered Cocoa)
- 1-1/2 1-1/2 1-1/2 teaspoons baking powder, (make sure it's fresh, not expired!)
- 1-1/2 1-1/2 1-1/2 teaspoons baking soda, (make sure it's fresh, not expired!)
- 1 1 1 teaspoon salt
- 2 2 2 eggs
- 1 1 1 cup milk
- 1/2 1/2 1/2 cup vegetable oil, (I use Canola, although some people don't care for its flavor in cakes)
- 2 2 2 teaspoons vanilla extract
- 1 1 1 cup boiling water OR 1 cup of very hot, black coffee

- 1/2 1/2 1/2 cup (1 stick) butter or margarine
- 2/3 2/3 2/3 cup HERSHEY'S Cocoa
- 3 3 3 cups powdered sugar
- 1/3 1/3 1/3 cup milk
- 1 1 1 teaspoon vanilla extract

- FROSTING DIRECTIONS:
- to to to 2 cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk if needed to make easier to spread.. Stir in vanilla. About 2 cups frosting.

- SALAD:
- 1 bag (3-ounce) Ramen Noodle Soup in Oriental (other flavors will work, too)
- 1/4 cup slivered almonds
- 1 bag (12-ounce) broccoli cole slaw (in the bagged salad section of the grocery store)
- 1 small can of Mandarin oranges, drained
- 1/2 of a sweet onion (like Vadalia) finely chopped (minced) (optional)
- 1/8 cup sunflower seeds (optional)
- 2 stalks celery, chopped (optional)
- DRESSING MIX:
- 6 Tablespoons canola oil
- 2 Tablespoons brown or white sugar
- 2 Tablespoons apple cider vinegar
- 1/2 ramen noodle seasoning packet

1.Place sweet potatoes in a medium saucepan of boiling water, and cook until tender but firm, about 15 minutes
- 3/4 pound (2 1/2 cups cut up) sweet potatoes or canned
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 2 eggs, beaten
- 1 1/2 cups milk
- 1/4 cup butter, melted
- 1 tsp. cinnamon and 1/2 tsp. vanilla,(optional)
- Note: I mixed all wet ingredients with the potatoes in one bowl, then mixed all the dry ingredients in another bowl, putting them together at the end. I did have to add more milk (almost 1/2 cup) to make them more spreadable. Made as Waffles, as well
