Entree, Ground Turkey: Turkey Veggie Meatloaf Cups

- 2 cups coarsely chopped zucchini
- 1 1/2 cups coarsely chopped onions
- 1 to 3 tsp. chopped garlic or to taste
- 1 red bell pepper, coarsely chopped
- 1 pound extra lean ground turkey
- 1/2 cup uncooked couscous
- 1 egg
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1/2 cup barbecue sauce, or as needed
Entree, Beef: Slow-Cooker Barbecue Beef Sandwiches

Sprinkle beef evenly with 1 teaspoon salt
- 1 (3 1/2-pound) eye-of-round roast, cut in half vertically
- 2 teaspoons salt, divided
- 2 garlic cloves, pressed
- 1 (10-ounce) can condensed beef broth
- 1 cup ketchup
- 1/2 cup firmly packed brown sugar
- 1/2 cup lemon juice
- 3 tablespoons steak sauce
- 1 teaspoon coarse ground pepper
- 1 teaspoon Worcestershire sauce
- 12 Kaiser rolls or sandwich buns
- Dill pickle slices

I made this for Will's seventh birthday, it wasn't very difficult, just time consuming
- 2 baked 9" or 10" round cakes
- 3 to 4 cups chocolate icing
- Chocolate wafer sticks (such as Pepperidge Farm Pirouette Cookies)
- Milk chocolate wafer rolls (Waffeletten cookies)
- Several pieces of white or off-white paper
- 3 10" wooden skewers
- Malted milk balls
- Rolo candies
- Root beer barrels
- Plastic pirate figures (we used Playmobil), washed thoroughly

- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 cup canned pumpkin
- 1 cup fat-free buttermilk or 1 cup soured milk
- 1 egg, beaten
- 3/4-1 cup pomegranate seeds
- 1/2 cup chopped walnuts (optional)
