In a small bowl, combine the yeast, sugar and water
- 2 tsp dry active yeast
- 1 tsp sugar
- 1/2 cup water
- 2.5-3 cups flour
- 1/2 tsp salt
- 1/4 cup vegetable oil
- 1/3 cup plain greek yogurt
- 1 large egg
Entree: Make-Ahead Roast and Gravy

ROAST: 1. Preheat the oven to 300ºF
- ROAST:
- 4 pounds sirloin beef roast
- 1/2 cup water
- GRAVY:
- beef drippings plus water to make 4 cups
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup water
- Liquid gravy browner, optional for color

1.Preheat oven to 450 degrees
- 1 1/2 cups cornflakes
- 1/2 cup plain dried breadcrumbs
- 1 large egg
- 1/2 cup low-fat buttermilk
- 1/4 cup all-purpose flour
- 1/8 teaspoon cayenne pepper (optional)
- Coarse salt and ground pepper
- 1 medium sweet onion, such as Vidalia, quartered crosswise and broken into rings (discard small center rings)
- 2 tablespoons olive oil
Dessert: Healthier Crustless Pumpkin Pie

Preheat oven to 400 F, and grease a 10-inch round pan
- ■1 tsp pumpkin pie spice
- ■2 tsp cinnamon
- ■1/2 tsp salt
- ■2 tsp baking powder
- ■1/3 cup flour (Almost any will work, but not coconut flour) (42g)
- ■1/3 cup xylitol or brown sugar (You can use a liquid sweetener. It’ll just be a bit gummy) (53g)
- ■2 nunaturals stevia packs, or 2 extra tablespoons brown sugar
- ■1 (15-oz) can pumpkin puree
- ■3/4 cup plus 2 tbsp milk of choice (210g)
- ■2 tbsp oil, or omit and increase milk to 1 cup
- ■1 tsp ener-g powder or 1 tablespoon ground flax
- ■2 1/2 tsp pure vanilla extract

Directions Preheat oven to 375 degrees F (190 degrees C)
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 bananas, mashed
- 3/4 cup white sugar
- 1 egg, lightly beaten
- 1/3 cup canola oil
- 1/3 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1/8 teaspoon ground cinnamon
- 3/4 teaspoon vanilla
- 1 tablespoon butter

- 1 3/4 ounces sugar, approximately 3 tablespoons
- 1.5 ounces cocoa powder, approximately 1/2 cup
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3 whole eggs, beaten
- 2 ounces unsalted butter, melted and slightly cooled
- 1 teaspoon pure vanilla extract
- 16 ounces buttermilk, room temperature
- 4 ounces chocolate chips, approximately 3/4 cup
- Vegetable spray, for waffle iron
- Serve with ice cream and toppings for desert.

- 1-1/2 c butter (3 sticks) softened
- 1-1/2 c. brown sugar, packed
- 1/2 c. white sugar
- 2 (3.4 oz.) pkgs. instant vanilla pudding
- 4 eggs, room temp
- 2 t. vanilla extract
- 4 c. of add-ins ( like chocolate/butterscotch/peanut butter/white chocolate chips, candy bars, m&m's, nuts, etc.)
