Soup: Lynn's Chili

1. In a skillet, brown hamburger and onion until burger is throughly cooked and no longer pink in the middle
- 1 pound lean hamburger
- 1 onion, chopped
- 1 green pepper, chopped (optional)
- 1 tsp. Chef's Secret seasoning (optional)
- 2 cans tomato soup
- 2 cans dark red kidney beans, drained
- 1 large can of whole tomatoes or 2 smaller cans of diced/choopped tomatoes
- 2 cups water
Breakfast/Entree:Healthy Crustless Quiche Base

Instructions Preheat the oven to 325 degrees F
- Cooking spray
- 1 cup – 2 cups filling of choice (sauteed veggies/meat)
- 4 eggs
- 1 cup greek yogurt (or sour cream)
- 1 cup 1% cottage cheese
- 1/4 cup unbleached all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Additional spices/herbs or choice, optional
- 2 cups grated cheese of choice
Dessert, Cake: 1-2-3 Cake (single serving)

- 1 box Angel Food cake mix (must use)
- 1 box of your favorite cake mix
Sides, Potatoes: Thyme Potatoes Au Gratin

Directions 1. Heat oven to 350 degrees F
- 3 cups whipping cream
- 1 large clove garlic, minced
- 2 tablespoons butter, softened
- 4 pounds red potatoes, peeled and thinly sliced
- 4 ounces Parmesan cheese, grated
- 2 tablespoons snipped fresh thyme
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon freshly ground pepper
- Shaved Parmesan, Italian (flat-leaf) parsley, dried tomato slices (optional)
Sides, Carbs: Grandma Schiessl's Dumplings

When Scott and I would visit our Grandma Schiessl in Madrid, Iowa, she would often make these fluffy dumplings
- 2 cups flour
- 4 tsp. baking powder
- 1 tsp salt
- 2 TBSP margarine, butter or "butter" spread (butter is better)
- 1 cup milk
- 2 small cans condensed Chicken and Rice Soup plus 2 cans of water
- (chopped fresh or dried parsley may be added as desired)
- instead of boiling in the canned soup, dumplings can be boiled in chicken stock if making homemade chicken and dumplings

Heat oven to 375 degrees. Coat a 2-quart baking dish with cooking spray
- 1 tablespoon butter
- 1 medium onion, thinly sliced
- 1 -2 tablespoon flour
- 2 cups nonfat milk
- 2 lbs potatoes, thinly sliced
- 1 cup shredded low-fat cheese
- 1 teaspoon salt
- 1/4 teaspoon black pepper

In a 3-qt. microwave-safe dish, combine cranberries and apple juice concentrate; cover with waxed paper
- 1 package (12 ounces) fresh or frozen cranberries, thawed
- 1 can (12 ounces) frozen apple juice concentrate, thawed
- 2 packages (.3 ounce each) sugar-free raspberry gelatin
- 1 can (8 ounces) crushed pineapple, undrained
- 1 cup chopped celery
- 1 medium navel orange, peeled, sectioned and chopped
- 1/2 cup chopped walnuts
