Entree: Baked Eggplant Parmesan

Directions Preheat oven to 350 degrees F (175 degrees C)
- 3 eggplant, peeled and thinly sliced
- 2 eggs, beaten
- 4 cups Italian seasoned bread crumbs
- 6 cups spaghetti sauce, divided
- 1 (16 ounce) package mozzarella cheese, shredded and divided
- 1/2 cup grated Parmesan cheese, divided
- 1/2 teaspoon dried basil

Boil your potatoes and garlic in your broth for about 15 minutes or until soft
- 5 medium red potatoes, cut into 1-inch cubes
- 32 oz chicken broth or enough to cover your potatoes
- 2 cloves of peeled garlic
- 4 oz lowfat sharp cheddar cheese
- 4 pieces of cooked bacon
- 1/2 cup chopped chives
- 1/2 cup ff greek yogurt
- salt & pepper to taste
Salads, Jello: Cranberry Jello Pretzel Salad

This is made in layers so read entire recipe before starting: Mix first 3 ingredients together
- 2 c. crushed pretzels (lg. ones crushed fine)
- 3/4 c. melted butter
- 1 tbsp. sugar
- 1 (8 oz.) pkg. cream cheese
- 1 (8 oz.) container Cool Whip
- 1/2 c. sugar
- 1 lg. pkg. black cherry Jello
- 2 cans whole cranberry sauce
- 2 c. boiling water

1. Preheat oven to 375 degrees
- 1/3 c vegetable or olive oil
- 1 to 3 tsp. Italian spice or seasoning blend (optional)
- 3 tsp garlic powder
- 2-16oz pkg pre-made pizza dough
- 7 oz sliced pepperoni
- 8 oz shredded mozzarella cheese
- Optional marinara dipping sauce

1. Preheat the oven to 450 degrees and spray a muffin tin with non fat cooking spray
- 1 egg
- 1 pound extra lean ground beef (5% fat)
- 1/2 red pepper, minced
- 2 ribs celery, minced
- 2 cloves of garlic, minced
- 1/3 white onion, minced
- 1/2 cup smoky barbecue sauce
- 2 tbsp whole grain mustard
- 1/2 cup seasoned bread crumbs, whole wheat if possible
- 1 tbsp Worcestershire sauce
- Salt and pepper (or grill seasoning)
- 1/2 pound of potatoes, chopped
- 1/4 cup buttermilk
- 2 green onions, chopped
- I had a green pepper and sub celery for carrots **

This is my favorite Sangria
- 1 bottle (750ml) Zinfandel
- 3/4 cup orange juice
- 1/3 cup pineapple juice
- 1/4 cup superfine sugar (you can use regular granulated sugar, but it doesn't dissolve as well)
- 1 orange, sliced
- 1 lemon, sliced
- 1 lime, sliced or cut into wedges

Combine flour and pepper in large Ziploc bag
- 2 lbs boneless, skinless chicken thigh tenders or chicken breast tenders*
- 1/4 cup all purpose flour
- 1/2 tsp black pepper
- 1 Tbsp canola oil
- 1/4 cup soy sauce
- 2 Tbsp rice wine vinegar
- 2 Tbsp ketchup
- 1 Tbsp brown sugar
- 1 garlic clove, minced
- 1/2 tsp grated fresh ginger
- 1/4 tsp red pepper flakes
- 1/2 cup cashews
Entrees, Fish: Everything Salmon Burgers

Place the salmon in a food processor and pulse to coarse grind the fish
- 1 1/2 lbs skinless salmon fillet, cut into large chunks
- 1 tablespoon grill seasoning (recommended-McCormick's Montreal Steak seasoning)
- 1 tablespoon poppy seed
- 1 tablespoon sesame seed
- 2 tablespoons dried onion flakes
- 1/4 cup fresh dill
- extra virgin olive oil, for drizzling
- 1/2 cup cream cheese, softened
- 3 scallions, chopped
- 1/2 cup sour cream
- 1 tablespoon lemon juice
- 4 crusty kaiser rolls (or other rolls of choice)
- green leaf lettuce
- sliced beefsteak tomato
- sliced red onion

Place graham cracker crumbs, cinnamon and brown sugar in a food processor, grind to find powder
- 1 cup graham cracker crumbs
- 1/2 tsp. ground cinnamon
- 1/2 cup light brown sugar
- 1/2 cup powdered sugar
- 3 egg whites, at room temperature
- pinch of salt
- 12 large marshmallows
- 1/3 cup chocolate chips
