grilled small slider hamburgers from the Food Network's Barefoot Contessa, a 5 star rated recipe
- 2 pounds premium ground beef (80 percent lean and 20 percent fat)
- 1 tablespoon good Dijon mustard
- 3 tablespoons good olive oil, plus extra for brushing the grill
- 1 teaspoon chopped thyme leaves
- 3 teaspoons chopped garlic
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 6 ounces grated Gruyere
- 12 small Brioche buns
- 4 ounces baby arugula
- 3 medium tomatoes, sliced in 1/8-inch-thick rounds
- 2 small red onions, sliced in 1/8-inch-thick rounds
- Ketchup, for serving
Crustless Pumpkin Pie

Preheat oven to 400 F, and grease a 10-inch round pan
- ■1 tsp pumpkin pie spice
- ■2 tsp cinnamon
- ■1/2 tsp salt
- ■2 tsp baking powder
- ■1/3 cup flour (Almost any will work, but not coconut flour) (42g)
- ■1/3 cup xylitol or brown sugar (You can use a liquid sweetener. It’ll just be a bit gummy) (53g)
- ■2 nunaturals stevia packs, or 2 extra tablespoons brown sugar
- ■1 (15-oz) can pumpkin puree
- ■3/4 cup plus 2 tbsp milk of choice (210g)
- ■2 tbsp oil, or omit and increase milk to 1 cup
- ■1 tsp ener-g powder or 1 tablespoon ground flax
- ■2 1/2 tsp pure vanilla extract

1. Preheat oven to 350°F (180°C)
- 2 cups granulated sugar
- 1/2 cup Salted Butter
- 1/2 cup Pure Canola Oil
- 1 tsp instant coffee granules
- 4 large eggs
- 1 cup all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1/2 tsp each baking powder and salt
- 1 1/2 cups Milk Chocolate Chips (1 pkg/270 g) divided
- 30 soft caramel candies
- 1 tbsp milk
- 3/4 cup finely chopped, toasted pecans

- 10 cups all-purpose apples, peeled, cored and sliced
- 1 cup white sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 cup water
- 1 cup quick-cooking oats
- 1 cup all-purpose flour
- 1 cup packed brown sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 cup butter, melted
Salad, Jello: Mom's Mandarin Sherbet Jello Salad

Quick and easy, with a refreshing orange-sherbet flavor
- 2 cans (11 oz. each) Mandarin oranges
- 2 pkgs. (3 oz. each) orange Jello
- 1 pint orange sherbet
- 1 can (13 1/2 oz.) crushed pineapple, drained
- may be served topped with whipped cream and/or garnished with additional Mandarin oranges and strawberries
Entree: Turkey Burgers

Directions Place turkey, onion, cilantro, mustard, and 1 teaspoon salt in a medium bowl
- 1 1/2 pounds ground turkey, dark meat only
- 1 small red onion, minced
- 3 tablespoons finely chopped cilantro
- 2 teaspoons Dijon mustard
- Coarse salt and freshly ground pepper
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 canned chipotle chile en adobo plus 1 teaspoon adobo sauce
- Vegetable oil, for brushing
- 8 thin slices Swiss cheese
- 4 sesame seed buns, split
- 4 red-leaf lettuce leaves
- 8 slices cooked hickory-smoked bacon
- 2 dill pickles, thinly sliced diagonally
Cornflake Christmas Wreath Cookies

These cookies look like little Christmas wreaths and are fun for kids to help with, very easy and delicious!
- 1/2 cup butter, real butter works best
- 4 cups miniature marshmallows (10-ounce bag)
- 1 teaspoon green food coloring
- 1/2 teaspoon almond extract, if desired
- 1/2 teaspoon vanilla extract
- 4 cups cornflakes cereal
- 1 (2.25-ounce) package cinnamon red hot candies

I make this every Christmas Eve for our family dinner
- BREAD PUDDING:
- Ingredients
- 3 3 3 eggs, beaten
- 1 1/2 1 1/2 1/2 cups white sugar
- 2 2 2 tablespoons light brown sugar
- 1 1 1 teaspoon ground cinnamon
- 1/2 1/2 1/2 teaspoon ground nutmeg
- pinch pinch of cloves
- 1/4 1/4 1/4 cup butter, melted
- 3 3 3 cups whole milk
- 10 10 10 slices bread, toasted and cut or torn into cubes (dried bread cubes for stuffing from the bakery work well)
- 1 1 1 cup raisins (I prefer golden raisins.)
- 1 1 to cup chopped dates, rolled in sugar to keep from sticking
- 1 1/2 1 1/2 1/2 cup walnuts or pecans
- VANILLA SAUCE:
- 1/2 1/2 1/2 cup light brown sugar
- 1 1 1 tablespoon all-purpose flour
- 1 1 1 pinch ground cinnamon
- 1 1 1 egg
- 2 2 2 tablespoons butter, melted
- 1 1/4 1 1/4 1/4 cups whole milk
- 1 1 1 pinch salt
- 1 1 1 tablespoon vanilla extract
- Cook's Note: For extra richness, substitute heavy cream for milk; for a lighter dessert, substitute skim milk for whole milk.
Dessert, Cake: Peach Upside Down Cake

- 1/4 cup butter
- 1/2 cup packed brown sugar
- 1-1/2 to 2 cups sliced, pitted and peeled peaches or frozen unsweetened peach slices, thawed and large slices cut in half lengthwise
- 1-1/4 cups all-purpose flour
- 1-1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup butter, softened
- 3/4 cup granulated sugar
- 1 egg
- 1 tsp. vanilla
- 1/2 cup milk
