Dessert: Healthy Apple Pie

Directions: Preheat oven to 350 degrees
- Crust
- 1 cup Fiber One Original bran cereal
- 2 sheets (8 crackers) low-fat honey graham crackers, broken into pieces
- 3 tbsp. granulated white sugar
- 1/4 tsp. cinnamon
- 1/4 cup light whipped butter or light buttery spread (like Brummel & Brown)
- Filling
- 6 - 8 Fuji apples (enough to yield 8 cups once sliced)
- 1/4 cup brown sugar (not packed)
- 2 tbsp. cornstarch
- 1 tbsp. plus 1 tsp. granulated white sugar
- 2 tsp. cinnamon
- 2 tsp. lemon juice
- 1/2 tsp. vanilla extract
- 1/4 tsp. salt
- Optional topping: Fat Free Reddi-wip
Chocolate Toffee Saltines

1. On a jelly roll pan, place foil to cover the entire bottom of the pan
- 1 sleeve of saltine crackers (approximately 38)
- 1 cup (2 sticks) of butter (not margarine)
- 1 cup firmly packed brown sugar
- 1 bag (11.5 ounces) of milk chocolate morsels
- 1 cup of coarsely chopped nuts of choice (walnuts, pecans, etc)
Entree, Chicken: Chicken Crescent Roll Casserole

- 2 (8 ounce) cans Pillsbury Refrigerated Crescent Dinner Rolls
- 1 (10 3/4 ounce) can cream of chicken soup, undiluted
- 3/4 cup grated cheddar cheese (or any cheese of choice) or 3/4 cup swiss cheese (or any cheese of choice)
- 1/2 cup 18% table cream (or use whipping cream)
- FILLING
- 4 ounces cream cheese (very soft)
- 4 tablespoons butter (very soft but not melted)
- 1/2-1 teaspoon garlic powder (optional)
- 1/3 cup onion, finely chopped (can use green onions)
- 2 large cooked chicken breasts, finely chopped (or use about 2 cups, can use cooked turkey)
- 1/2-3/4 cup finely grated cheddar cheese
- 1/2 teaspoon seasoning salt (or use 1/2 teaspoon white salt or to taste)
- 1/2 teaspoon ground black pepper (or to taste)
- 2 -4 tablespoons mayonnaise or 2 -4 tablespoons whipping cream
- 1 -2 cup grated cheddar cheese (for topping)
White Turkey or Chicken Chili

- Ingredients
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 pounds ground turkey or chopped cooked chicken
- 1 onion chopped
- 1 or 2 (4 ounce) cans canned green chile peppers, chopped
- 1/2 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1/2 to 1 teaspoon ground cinnamon
- ground cayenne pepper to taste
- ground white pepper to taste
- 3 (15 ounce) cans cannellini beans
- 1 can of corn
- 5 cups chicken broth
- 2 cups shredded Monterey Jack cheese
- may also add chopped green pepper or chopped spinach
Bread: Cheesy Artichoke Bread

Preheat the oven to 350 degrees
- 1/4 cup butter
- 3 garlic cloves, pressed
- 1 (14-ounce) can artichoke hearts, drained and chopped
- 4 ounces shredded Mozzarella cheese
- 1 cup grated parmesan cheese
- 1/2 cup sour cream
- 1 French bread loaf
- Salt and freshly ground black pepper
- 2 ounces shredded cheddar cheese
Appetizers: Ham and Cheese Pretzel bites

Contrary to what it seems, it doesn’t take much effort to make these
- 1 package (1/4 ounce) active dry yeast (or instant yeast)
- 2 tablespoons plus 1 teaspoon packed brown sugar, divided
- 1/4 cup warm water (110-115 degrees F)
- 1 cup warm milk (110-115 degrees F)
- 2 1/2 to 3 cups flour
- 1/2 cup ham, finely chopped (about 3 ounces)
- 1/2 cup cheese, shredded, of choice (I used cheddar)
- 6 cups water
- 4 teaspoons baking soda
- 4 tablespoons unsalted butter, melted
- 1-2 tablespoons coarse salt
This and That: Berry Wash (to keep mold away)

Dump the berries into the mixture and swirl around
- When you get your berries home, prepare a mixture of:
- 1/2 C. Vinegar
- 5 C. Water

Brown meat and drain well, if necessary
- 1 pound elbow macaroni, cooked, (or other similarly shaped pasta-like small shells)
- 1 pound Ground turkey, (or beef, chicken, sausage or tofu crumbles)
- 1 jar Pasta Sauce, (26 ounces)
- freshly grated Parmesan cheese
- 2 eggs
- 1 pound Ricotta cheese
- 2 cups mozzarella cheese, shredded
- 2 cups Veggies , (diced zucchini, matchstick carrots, etc.)
- salt and pepper

Preheat oven to 450F. Whisk flour and salt together in a large bowl
- 1 1/2 cups self-rising flour (plus more for flouring surface)
- 1 teaspoon salt
- 1 1/4 cups plain Greek yogurt
