CARAMEL APPLE DESSERT MADE OVER {kraft}

Mix wafer crumbs and margarine; press onto bottom of 13x9” pan
- 45 low-fat nilla Wafers, fine crush {1.5 c.}
- 1/4 cup soft margarine, melted
- 8 oz. FF cream cheese, softened
- 1 tablespoon granulated splenda
- 3.25 cups cold fat-free milk, divided
- 8 oz. SF cool whip, thawed, divided
- 2 {1oz} pkg. jello-o vanilla SF-FF Instant Pudding
- 1/2 cup SF caramel ice cream topping, divided
- 1 each red and green apple, chopped
- 1/4 cup planters cocktail peanuts, chopped
Appetizers: Make-Ahead Snowman Cheese Ball

1 Mix 3 packages cream cheese and the Cheddar cheese; divide into 3 equal parts
- packages (8 ounces each) cream cheese, softened

Mom makes these baked beans often for our summer family get togethers
- 1 1/2 pounds Ground Beef, cooked and drained
- 1/2 pound Bacon, cut up and cooked until crispy; drained (mom always uses smoked bacon)
- 1 onion, diced (may saute onion with meat to make it more tender and less strong)
- 1 large can pork and beans, (mom uses the large can of Bush's beans - Original Flavor)
- 1 16 oz. can red kidney beans, drained
- 1 16 oz. can pinto beans, drained (sometimes Mom substitues the pintos for a can of Garbanzo beans; drained)
- 1 16 oz. can lima beans, drained
- 1/4 cup brown sugar
- 1 cup ketchup
- salt and pepper to taste if desired
Soup: Butternut Squash, Apple Soup

1. Peel squash. (Microwaving one whole squash at a time, on high for 2 min
- 2 medium butternut squash
- 1 onion
- 1 royal gala or pink lady apple
- 1/4 cup (50 mL) butter
- 900-mL carton chicken broth
- 1 cup (250 mL) whipping cream
- 1/2 tsp (2 mL) dried sage leaves, crumbled
- Generous pinches cinnamon and salt
- 3 tbsp (45 mL) maple syrup
Dessert, Cookies: Raspberry and Almond Shortbread Thumbprints

Preheat oven to 350 degrees F (175 degrees C)
- 1 cup butter, softened
- 2/3 cup white sugar
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1/2 cup seedless raspberry jam
- 1/2 cup confectioners' sugar
- 3/4 teaspoon almond extract
- 1 teaspoon milk
Breakfast: Egg Mini Omelets with Broccoli and Cheese (WW 2pts)

Preheat oven to 350°. Steam broccoli with a little water for about 6-7 minutes
- 4 cups broccoli florets
- 4 whole eggs (I used Egg Beaters)
- 1 cup egg whites
- 1/4 cup reduced fat cheddar
- 1/4 cup good grated cheese like pecorino romano
- 1 tbs olive oil
- salt and fresh pepper

- 1/3 cup diced green pepper (I never use this, since I can't eat bell pepper) shopping list

- 2 cans tomato sauce (8 ounces each) or 2 can diced tomatoes (2 lb each) and omit the 2 cups water shopping list

- 2 cloves garlic
- 1 (15 ounce) can garbanzo beans, drain and reserve liquid
- 2 tablespoons lemon juice
- 1 1/2 tablespoons tahini
- 3/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon paprika
- 2 tablespoons light sour cream or lowfat yogurt
