In a bowl put together, and mix
- 1 8 oz cool whip
- 1 11 oz can mandarin oranges
- 1 10 oz jar of maraschino cherries half
- 1/2-1 cup of coconut
- 1/2-1 cup of pecans halves
- 2 cup mini marshmallows
CHEESE CAKE RICOTTA CHEESE

Directions Preheat the oven to 350 degrees F
- Apple-Cranberry Compote:
- Ingredients
- 5 ounces (9 whole crackers) cinnamon-sugar graham crackers
- 4 tablespoons (1/2 stick) unsalted butter, melted
- 4 ounces cream cheese, at room temperature
- 2/3 cup sweetened condensed milk (from a 14-ounce can)
- 1 cup fresh requeson or ricotta cheese
- 2 teaspoons pure vanilla extract
- 2 large eggs
- 1/2 teaspoon grated orange zest (from 1 small orange)
- Apple Cranberry Compote, recipe follows
- Special equipment: 1 silicone 12 (1/2 cup) muffin mold
- 4 tablespoons (1/2 stick) unsalted butter
- 1/4 cup packed dark brown sugar
- 1 Granny Smith apple, cored and cut into 1/2-inch pieces
- 1/4 cup dried cranberries
- 1/4 teaspoon ground cinnamon

In a large heatproof bowl, combine 1 1/4 cups plus 1 tablespoon water, corn syrup and almond extract

- Green and violet food coloring (or your favorite colors)
Oatmeal and banana with raisins

- 3 mashed bananas (the riper the better!),
- 1 cup vanilla almond milk,
- 2 eggs,
- 1 tbsp baking powder,
- 3 cups oats,
- 1 tsp vanilla extract,
- 3 T. Blueberries or raisins
Peanut butter salad dressing

Preparation 1. Whisk together first 7 ingredients in a bowl until blended and smooth
- Serve this peanut butter salad dressing over mixed greens for a uniquely flavored salad. This dressing pairs especially well with Asian cuisine.

- 2 tablespoons honey
- 2 tablespoons creamy peanut butter $
- 1 teaspoon crushed red pepper
- 1/2 teaspoon minced fresh ginger

Lemon Chicken Quinoa Soup

PREPARATION In a medium-size pot over medium-high heat, add olive oil

- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 carrots, peeled and diced
- 2 cloves garlic, minced
- Kosher salt and cracked black pepper, for seasoning
- 4 cups low-sodium chicken broth
- 1 14.5-ounce can fire-roasted diced tomatoes
- 2 cups cooked chicken, shredded from a rotisserie chicken
- 1 cup frozen petite peas
- 2 teaspoons lemon zest
- 2 tablespoons fresh lemon juice
- 2 teaspoons fresh thyme leaves
- 2 cups quinoa, cooked
Real Potato Soup

Directions In a Dutch oven, cook the potatoes, carrots and celery in water until tender, about 15-20 minutes

- 1/4 cup peeled fresh ginger, coarsely chopped
- 1/4 cup diagonally-sliced lemongrass
- 8 green tea bags
- 1/4 cup orainic honey
- 1 quart boiling water
- 1/2 cup lite organic coconut milk
Lemon Cheese Bars

- Lemon Cheese Bars
- 16 16 small bars
- 1 1 1 cup all purpose flour
- 1/2 1/2 1/2 cup pecans, finely chopped
- 1 1/2 1 1/2 1/2 cups confectioner's sugar, divided
- 6 6 6 tablespoons butter, softened
- 1 1 1 package cream cheese, softened (8 ounces)
- 3 3 3 tablespoons lemon juice
- 1/2 1/2 1/2 teaspoon lemon extract
- 1 1 1 egg
- While crust is baking, combine remaining ingredients and beat until smooth.
- to 30-35 from oven and pour cheese mixture over crust. Crumble reserved flour mixture over top of cheese mixture. Return to oven and bake for about 30-35 minutes or until golden. Cool on wire rack, then refrigerate until chilled.
- For ease in cutting dip knife in hot water after each cut.
