Perfect Pot Roast

- Salt and freshly ground black pepper
- One 3 to 5-pound chuck roast
- 2 or 3 tablespoons olive oil
- 2 whole onions, peeled and halved
- 6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
- 1 cup red wine, optional
- 3 cups beef broth
- 2 or 3 sprigs fresh rosemary
- 2 or 3 sprigs fresh thyme

1 First make the sesame noodles: Cook the spaghetti according to package directions
- 1 lb spaghettini (get the thinnest spaghetti you can find)
- 1/2 cup soy sauce
- 1/4 cup sesame oil (some reviewers have said that 1/2 cup of oil is too much and have halved the amount, so use your own)
- 1/3 cup sugar
- 3 scallions, thinly sliced
- 1/4 cup sesame seed (or more)

- 2 garlic cloves, minced

- 8 slices turkey bacon or center-cut bacon, halved widthwise
- 16 large (not jumbo) raw shrimp, peeled, deveined, tails removed
Buffalo Brussels

Bring a saucepan of salted water to a boil
- Brussels sprouts:
- 1 lb. brussels sprouts, trimmed and halved
- Canola oil (for deep-frying)
- 1/4 cup flour
- 2 eggs, lightly beaten
- 1/2 cup Panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 tsp. salt
- Freshly ground black pepper
- Buffalo Hot Sauce:
- 1/4 cup hot sauce
- 1/4 cup butter, melted
- Blue Cheese Dip:
- 1 cup sour cream
- 1/2 cup mayonnaise
- 2 to 4 oz. blue cheese, crumbled (depending on how much you like blue cheese)
- 1 clove garlic, minced
- 1 Tbsp. white wine vinegar
- 2 Tbsp. chives, chopped
- Freshly ground black pepper

- Makes 1 pitcher
- 1 1/2 cups light rum
- 1 1/4 cups dark rum
- 1 1/4 cups passion fruit syrup (or substitute with grenadine)
- 1 1/4 cups fresh orange juice
- 1 1/4 cups fresh lime juice
- 3 tablespoons superfine sugar, or more to taste
