Smashed Potato Gratin

- 3 pounds Yukon gold potatoes
- 3 garlic cloves, peeled
- Kosher salt
- 1 cup milk
- 1 cup sour cream
- 2 cups grated Cheddar
- 3/4 cup panko bread crumbs
- 1/2 cup grated Parmigiano-Reggiano
- Pinch cayenne pepper
- 1 bunch chives
Spicy Chicken Enchiladas

Heat oven to 350°F
- 1 1 to 350°F. 13x9-inch 1 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, mix sour cream, tomatoes, 1 cup of the cheese and the seasoning blend. Stir in chicken.
- 3 3 20 Bake uncovered 20 minutes or until cheese is melted and enchiladas are thoroughly heated. Garnish with green onions.
Dreamy Chocolate Peanut Butter Fudge

- 2 cups canned pure pumpkin
- 1 (18.3-ounce) box fudge brownie mix

Refried Black Beans Recipe

- 1 pound dried black beans, soaked overnight in cold water
- 4 cloves garlic, minced
- 1 large onion, diced
- 1/2 teaspoon ground cumin

Chicken Cordon Bleu

Coat a 9″ x 13″ baking dish with non-stick cooking spray
- Parmesan-Dijon Cream Sauce:
- 3 boneless, skinless chicken breasts, cut in half (like you’re butterflying, but finish the cut)
- 12 slices deli honey ham
- 1 cup Panko bread crumbs
- 2 tablespoons butter, melted
- 6 slices Swiss or Provolone cheese
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 cup milk
- 1/2 cup chicken broth
- 1/2 tablespoon Dijon mustard {if you like a strong mustard taste, use 1 tablespoon}
- 3/4 teaspoon Worcestershire sauce
- 1/2 cup finely grated Parmesan cheese
- Parsley, for garnish
- Salt and pepper, to taste

The Sleep Doctor's Sleep Slim Smoothie

Combine the cherry juice, banana, milk or yogurt with fat-free milk, ice and vanilla in a blender
- 1 cup tart cherry juice
- 1/2 banana
- 1/2 cup soy milk or 4-6 oz soy yogurt (if using soy yogurt, add an additional 1/2 cup fat-free milk)
- 5 ice cubes

The Lady's Chicken Noodle Soup

- 1 (2 1/2 to 3-pound) fryer chicken, cut up
- 3 1/2 quarts water
- 1 onion, peeled and diced
- 1 1/2 to 2 teaspoons Italian seasoning
- 1 teaspoon lemon-pepper seasoning
- 3 cloves garlic, minced
- 4 bay leaves
- 3 chicken bouillon cubes
- Kosher salt and freshly ground black pepper
- 2 cups sliced carrots
- 2 cups sliced celery, with leafy green tops
- 2 1/2 cups uncooked egg noodles
- 1 cup sliced mushrooms
- 3 tablespoons chopped fresh parsley leaves
- 1/3 cup cooking sherry
- 2 teaspoons chopped fresh rosemary leaves
- 1 cup grated Parmesan, optional
- 3/4 cup heavy cream, optional
- Seasoning salt
- Freshly ground black pepper
- Crusty French bread, for serving
Balsamic Tomato Salad with Trottole and Mozzarella

Combine the first six ingredients and let sit at room temperature for 2-4 hours
- 6 cups assorted small tomatoes, I used sunburst, campari, cherry and grape tomatoes
- 2 tbsp extra virgin olive oil
- 1/2 cup basil, sliced very thin
- 1/2 cup Italian flat leaf parsley, chopped small
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh cracked pepper
- 8 ounces trottole, or your favorite large pasta
- 1 1/2 tablespoons balsamic vinegar
- 6 ounces black olives, sliced
- 6 ounces mozzarella cheese, diced (mozzarella pearls would be great with this as well)
