Baked Western Meatballs

Boil to thicken. Pour over meat balls and bake in slow oven for approximately 1 hour
- Meatballs:
- 1 dash garlic
- 3 tbsp. butter
- 2 lbs. hamburger
- 2 eggs, beaten
- 1 cup milk
- 2 cups bread crumbs
- 1 tsp. salt
- 1/2 tsp. mace
- 1/2 tsp. celery seed
- 1 tsp. pepper
- Roll in balls and fry to brown.
- Sauce:
- 1 tbsp. margarine
- 3/4 cup chopped onions 1 cup catsup
- 1 Oxo cube, dissolved in
- 1 cup boiling water 1/2 cup molasses 1/4 cup brown sugar 2/3 cup vinegar
- 2 tsp. dry mustard 1/2 tsp. salt
- 1 tbsp. cornstarch
Molten Chocolate Cake

Preheat oven to 425 degrees
- •4 pieces (squares) Semi-sweet Baking Chocolate
- •1/2 cups Butter
- •1 cup Powdered Sugar
- •2 whole Eggs
- •2 whole Egg Yolks
- •6 Tablespoons Flour
- •2 cups Real Whipping Cream (seriously It's So Much Better!!!)
- •2 Tablespoons Sugar
Beer and Beef Chili

1. Warm oil in a large pot over medium-high heat
- 1 tbsp olive oil
- 1 large yellow onion, diced
- 1 large green or red bell pepper, chopped
- 1-1.25 lb ground beef
- 1 1/2-2 tbsp chili powder
- 1 tsp cayenne pepper
- 1 tsp ground cumin
- salt, to taste
- 2 tbsp light brown sugar(I recommend 1)
- 2 (14.5 oz) cans pinto or red kidney beans, drained
- 1 (14.5 oz) can diced tomatoes
- 1 (12 oz) bottle dark beer (I used Guinness)
- 1-2 tbsp cornmeal, optional
Single-Crust Pie Dough

1. Process flour, sugar, and salt in food processor until combined
- 1 1/4 cups all-purpose flour, plus extra for rolling out the dough
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 4 tablespoons vegetable shortening, cut into 1/4-inch pieces and chilled
- 6 tablespoons unsalted butter, cut into 1/4-inch pieces and chilled
- 3 –4 tablespoons ice water
Apple Pie Bread

Preheat oven to 350 degrees
- 1/2 - cup butter, softened
- 1/2 - cup granulated sugar
- 1/2 - cup packed brown sugar
- 1/3 - cup buttermilk
- 2 - teaspoons baking powder
- 2 - eggs
- 1 - teaspoon vanilla extract
- 2 - cups all purpose flour
- 1/2 - teaspoon apple pie spice
- 1/2 teaspoon salt
- 2 - cups peeled apples, diced
- 3/4 - cup pecans, chopped
- streusel - nut topping (recipe below)
Twice-Baked New Potatoes Pioneer Woman

Preheat the oven to 375 degrees F
- 12 new potatoes
- 2 tablespoons olive oil
- 1 1/2 cups grated Monterey Jack cheese
- 4 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 tablespoon finely minced fresh chives
- 1 clove garlic, pressed
- Salt and pepper
Buttered Rosemary Rolls (adapted from The Pioneer Woman)

Dissolve yeast in 1/4 cup warm water
- MY OWN BREAD ROLL RECIPE:
- 2 1/4 tsp fast acting yeast (or 1pkg)--I used Fleischmann's Bread Machine Yeast
- 1/4 cup warm water (105°F-110°F)
- 2 tsp sugar
- 1 cup milk, just to scalding hot (do not simmer or boil)
- 1/3 cup sugar
- 1/4 cup butter
- 1 tsp salt
- 1 egg, lightly beaten
- 3 1/2 cups bread flour (dough will be somewhat sticky, but the less you use, the lighter the rolls)
- 1 cups whole wheat flour
- 3 Tbsp. vital wheat gluten (optional)
- 2 Tbsp. butter, melted, for brushing
- PIONEER WOMAN'S VERSION OF HER ROLLS:
- Frozen, Unbaked Dinner Rolls (if not using my recipe above)
- For the topping:
- 1/2 stick melted butter, Regular, Salted
- Fresh Rosemary, Coarsely Chopped
English Muffin Bread

Mix altogether, then spoon into (4) well greased loaf pans
- 5 1/2 cups warm water
- 3 packages RAPID RISE yeast
- (Update: You can use regular yeast, but you will need to let is rise TWICE. Once in the bowl, til it reaches the top…and then again in the pans, til it reaches the top. With the RAPID RISE you only need to let it rise once in the pans.)
- 2 Tablespoons salt
- 3 Tablespoons sugar
- 11 cups flour (I used bread flour….but my Mom always used All Purpose)
