- 6 scallions, white and green parts, minced
- 2 garlic cloves minced
- 2/3 cup panko crumbs
- 5 ounces mascarpone cheese, preferably from Italy

- 2 1/2 tablespoons minced fresh parsley leaves

- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can pinto beans, rinsed and drained
- 1 (14 oz) can diced tomatoes, with juice
- 1 (4 oz) can mild or hot chopped green chilies
- 1 T. chili powder
- 2 t. ground cumin
- 1 t. salt
- 12 white corn tortillas
- 2 cups grated reduced-fat Monterey Jack cheese
Cranberry Turkey Burgers

Preheat oven broiler or barbecue to medium high
- 1 pound ground turkey?(or use ground beef)
- 2/3 cup dried cranberries (if unavailable in your grocery, omit)?
- 1/3 cup quick cooking oats?
- 1/3 cup green onion, chopped fine?
- 2 tablespoons fresh orange juice?
- 2 tablespoons fresh parsley, chopped?
- 2/3 teaspoons ground allspice?
- 1/2 teaspoon ground ginger?
- 1/2 teaspoon dried basil?
- 1/2 teaspoon cinnamon?
- Ground pepper to taste??
Lemon-Ginger Snowballs

- 1/2 cup shortening
- 1 T. grated fresh ginger (or finely chopped crystallized)
- 1 T. vanilla
- 2 t. honey-lemon-ginseng flavor green tea (0.1 oz bag)
- 1 t. finely shredded lemon peel
- 1 cup packed brown sugar
- 2 t. ground ginger
- 1 t. baking powder
- 1/2 t. baking soda
- 1/4 t. salt
- 2 large eggs
- 2 1/2 cups all-purpose flour
- Granulated sugar
- 1 recipe Powdered Sugar Glaze
- Powdered Sugar Glaze: In a bowl stir together 1 c. powdered sugar and about 4 t. water to reach drizzling consistency.
- Chocolate variation: Prepare as directed, adding 1/4 cup natural unsweetened cocoa powder with the brown sugar, reducing the flour to 2 1/3 cups. Bake 10 minutes or until edges are set. Dust with powdered sugar.
