"This recipe is excellent served for breakfast with fruit or at lunch or dinnertime with a salad
- 1/2 pound thick sliced bacon
- 1 (10 ounce) package frozen chopped spinach, thawed
- 1 (8 ounce) container sour cream
- salt and pepper to taste
- 2 (9 inch) unbaked pie crusts
- 2 tablespoons olive oil
- 1 onion, finely diced
- 1/2 pound fresh mushrooms, finely diced
- 2 cups finely diced smoked ham
- 8 ounces Monterey Jack cheese, shredded
- 8 ounces Cheddar cheese, shredded
- 4 ounces Parmesan cheese, grated
- 8 eggs
- 1 1/2 cups half-and-half cream
- 1 tablespoon dried parsley
- salt and pepper to taste
Gingerbread with Spiced Creme Anglaise

Guinness adds rich flavor to this dense spice cake
- 1 stick unsalted butter
- 1 cup turbinado sugar (recommended: Sugar in the Raw)
- 3 large eggs
- 2 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 1/2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground cloves
- 1/4 teaspoon freshly grated nutmeg
- 1 cup molasses
- 1 cup Guinness, or other dark beer
- Spiced Creme Anglaise, recipe follows
- Confectioners' sugar, for dusting
- 2 cups heavy cream
- 1/2 teaspoon orange zest
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon grated nutmeg
- 1/8 teaspoon ground ginger
- 3 large egg yolks
- 1/4 cup sugar
Country Style Fried Potatoes

"These fried potatoes are the perfect companion for bacon and eggs
- My Additions:
- 1/3 cup shortening
- 6 large potatoes, peeled and cubed
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Chopped onions
- Rosemary
- Butter & Olive Oil instead of shortening
- TIPS:
- "If you want super results, cube your potatoes, put them in a container with water, then place in fridge for a couple of hours before frying."
Meadowwood Tapioca Pudding (Slow Cooker)

We love pudding here. Tapioca pudding is a favorite
- 4 cups whole milk
- 2/3 cup white sugar (can cut to 1/2 cup)
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1/2 cup small tapioca pearls
- 3 egg yolks
- Optional: Beat egg whites to stiff peaks and fold in towards end of cooking.
Chicken and Smoked Sausage Gumbo

In a large stainless-steel pot, heat the oil over moderate heat
- 3 tablespoons cooking oil
- 3 tablespoons flour
- 1 onion, chopped
- 2 ribs celery, chopped
- 1 green bell pepper, chopped
- 1 ten-ounce package frozen sliced okra
- 1 bay leaf
- 1 1/2 teaspoons dried thyme
- 1 teaspoon dried oregano
- 2 teaspoons salt
- 1/4 teaspoon fresh ground black pepper
- 1/4 teaspoon cayenne pepper
- 1 3/4 cups canned crushed tomatoes in thick puree, (one 15-ounce can)
- 1 quart canned low sodium chicken broth
- 1/2 pound smoked sausage, halved lengthwise and cut crosswise into 1/4-inch slices
- 1 pound boneless skinless chicken breasts, cut into 3/4-inch pieces
- 3/4 cup long grain rice
Pan-Sautéed Chicken with Vegetables & Herbs

1. Heat the oven to 350°F
- 2 tablespoons all-purpose flour
- 1/8 teaspoon ground black pepper
- 1/8 teaspoon paprika
- 4 bone-in chicken breast halves (about 2 pounds)
- 2 tablespoons olive oil
- 2 small red onions, cut in quarters
- 1 pound new potatoes, cut in quarters
- 8 ounces fresh whole baby carrots (about 16), green tops trimmed to 1-inch-long
- 1 1/2 cups Swanson® Chicken Broth or Swanson® Chicken Stock
- 3 tablespoons lemon juice
- 1 tablespoon chopped fresh oregano leaves
- Chopped fresh thyme leaves
