Fill large pot with water
- 1 lb ground beef
- 1 small onion, chopped
- 1 tsp chopped garlic
- 2 tsp chili powder
- 1 tsp salt
- 1/2 tsp pepper
- 1 can tomato soup
- 1 cup cheddar cheese (plus more to sprinkle on top)
- 1 cup cooked rice
- 4 medium sized bell peppers

- For Cakes
- 2 cups moist-style yellow cake mix (1/2 of an 18.25-oz. box)
- 3/4 cup fat-free sour cream
- 1/4 cup fat-free liquid egg substitute
- 2 oz. (1/4 cup) Torani Sugar Free Syrup, Hazelnut
- 1 tsp. cinnamon
- For Crumb Topping
- 1 1/2 cups Fiber One bran cereal (original)
- 1/4 cup fat-free liquid egg substitute
- 1/4 cup no-sugar-added applesauce
- 3 tbsp. Splenda No Calorie Sweetener, granulated
- 1 tbsp. brown sugar (not packed)
- 1 tbsp. cinnamon
German Potato Pancakes

Directions In a large bowl, beat together eggs, flour, baking powder, salt, and pepper
- 2 eggs
- 2 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 6 medium potatoes, peeled and shredded
- 1/2 cup finely chopped onion
- 1/4 cup vegetable oil
Spinach Salad with Pistachio Chicken

Directions Place pistachio in a food processor or blender, and pulse until finely diced
- 1 cup shelled pistachio nuts
- 4 tablespoons olive oil
- 4 skinless, boneless chicken breast halves
- garlic powder to taste
- black pepper to taste
- 1 (10 ounce) package baby spinach leaves, rinsed and drained
- 1 pint cherry tomatoes
- 1 avocado - peeled, pitted and sliced
- 1 yellow bell pepper, julienned
- 2 green onions, sliced
- grated Parmesan cheese for topping
- bottled balsamic salad dressing, to taste
Oyster Dressing

Allow all bread cubes to sit uncovered for several hours or overnight until it's dry
- 3 cups Cornbread, Cut Into Cubes
- 2 loaves Ciabatta Or Other Crusty Italian Bread, Cut Into Cubes
- 2 Tablespoons Bacon Fat Or Butter
- 3 cans Oysters, Drained, Liquid Reserved
- 4 whole Carrots, Diced
- 6 stalks Celery, Diced
- 2 whole Small Onions, Diced
- 8 cups Turkey (or Chicken) Broth
- 1/2 teaspoon Ground Sage
- 1 teaspoon Chopped Rosemary
- Salt And Pepper, to taste
- 2 whole Eggs
- 1/4 cup Chopped Fresh Parsley
