Brownie-Walnut Pie

- 6 tablespoons unsalted butter, diced
- 3 ounces unsweetened chocolate, chopped
- 1 1/4 cups packed dark brown sugar (about 9 ounces)
- 3 eggs, at room temperature
- 3/4 cup flour
- 1/4 teaspoon fine salt
- 1/2 cup walnut pieces, toasted
- Biscotti Crumb Crust, recipe follows
- Walnut halves, optional
- Ice cream or sweetened whipped cream, optional
- One 5.5-ounce box biscotti (about 8), coarsely broken
- 1/2 stick unsalted butter, chilled and diced
- 1/4 cup packed dark brown sugar
Horseradish Mayonnaise

Use a vegetable peeler or a knife to peel the surface skin off of the horseradish
- 1 (5-inch) piece of horseradish root (use about 4 big tablespoons, grated)
- 1 cup good mayonnaise
- Juice of 1/4 lemon
- Dash hot sauce (recommended: Tabasco)
- Pinch sea salt
- 1 teaspoon prepared horseradish

Turkey Pot Pie I

Directions Preheat oven to 425 degrees F (220 degrees C)
- 1 recipe pastry for a (10 inch) double crust pie
- 4 tablespoons butter, divided
- 1 small onion, minced
- 2 stalks celery, chopped
- 2 carrots, diced
- 3 tablespoons dried parsley
- 1 teaspoon dried oregano
- salt and pepper to taste
- 2 cubes chicken bouillon
- 2 cups water
- 3 potatoes, peeled and cubed
- 1 1/2 cups cubed cooked turkey
- 3 tablespoons all-purpose flour
- 1/2 cup milk
Spicy Chicken Soup

Combined all ingredients and cook in crock-pot for 6-8 hours on low
- This has become a family favorite. It is adapted from a recipe on allrecipes. It makes a huge pot of soup and freezes very well.
- 1 (16 ounce) jar mild chunky salsa
- 2 (14.5 ounce) cans peeled and diced tomatoes
- 2 (14.5 ounce) cans chicken broth
- 1/2 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 2 tablespoons dried parsley
- 1 tablespoon onion powder
- 1 tablespoon chili powder
- 2 tablespoons olive oil
- 1 onion, chopped or 2 T. dehydrated minced onion
- 3 cloves garlic, chopped
- 1 (15 ounce) bag frozen corn
- 2 (16 ounce) can black beans, undrained
- 8 skinless, boneless chicken breast halves (can be added frozen)

Directions In a medium bowl, mash together the avocados, lime juice, and salt
- 3 avocados - peeled, pitted, and mashed
- 1 lime, juiced
- 1 teaspoon salt
- 1/2 cup diced onion
- 3 tablespoons chopped fresh cilantro
- 2 roma (plum) tomatoes, diced
- 1 teaspoon minced garlic
- 1 pinch ground cayenne pepper (optional)
