Scallops Casino Recipe

Pre-heat oven to 400 degrees Put bacon in a skillet or microwave and cook thru but not crisp
- 1 lb. Sea Scallops, rinsed and patted dry
- 4 slices of bacon
- 5-6 slices mozzarella cheese, sliced thin
- 1 Tablespoon garlic, minced
- 1 1/2 Tablespoon flavored breadcrumbs
- 1 Tablesoon lemon juice
- salt
- olive oil
- parsley
- fresh basil (optional)
Baked Pickles

Turn oven broiler on high
- 1 jar pickle slices (we like large, thick slices of Claussen dill pickles)
- 2 eggs
- 1/3 cup flour
- 1 Tbsp Worcestershire sauce
- 1 tsp hot sauce
- 1 tsp garlic powder
- 1 tsp Cajun seasoning
- 1 tsp pepper
- 1 1/2 cups panko bread crumbs
- Ranch dressing + hot sauce for dipping
