Par-boil and shred chicken breasts
- 6 boneless, skinless chicken breasts, poached and shredded
- 8 cups high quality chicken stock
- 8 large poblano peppers
- 2 large red bell pepper
- 5 large starchy potatoes, peeled and cubed
- 4 tablespoons EVOO – Extra Virgin Olive Oil
- 2 cups defrosted kernels
- 2 Fresno or jalapeño peppers, finely chopped, optional for a spicy soup
- 4 cloves garlic, finely chopped
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- Salt and pepper to taste
- Garnishes: lime wedges, unsalted lightly crushed blue corn tortillas, fresh chopped cilantro, optional
