Green Bean Casserole with Celery Root and Bacon

* Preheat oven to 350°F. * Wash then blanch green beans
- ~For the Bechemel:
- 4 cups green beans, trimmed
- 4 slices of thick-cut bacon
- 1 1/2 cups button mushrooms
- 1/2 piece celery root
- 4 tablespoons unsalted butter
- 1/2 onion peeled, and chopped
- 1/2 cup plus 2 tablespoons all-purpose flour
- 4 cups whole milk
- 2 tablespoons Whole grain mustard
- A couple sprigs parsley, chopped
- 1 box French’s Fried Onions
- Italian seasoned breadcrumbs
Jalapeno Lime Skillet Shrimp

* To a cast iron skillet over medium-high heat, add the oil and butter
- 1 Tablespoon Olive Oil
- 2 Tablespoons Butter
- 1/4 teaspoons Red Chile Flakes
- 1 whole Small Onion Chopped
- 1 whole Jalapeño, Seeded And Minced
- 2 cloves Garlic, Minced
- 2 whole Tomatoes, Chopped
- 1 cup Chicken Broth
- 1 pound Shrimp, Peeled (I Removed The Tails; Your Preference)
- 1 whole Lime, Zested
- 1/2 Lime, Juiced
- 3 Tablespoons Cilantro, Chopped
- Salt To Taste
- Lime Wedges For Serving
Frozen Yogurt Trail Mix Bars

* Mix all ingredients in a bowl
- 2 cups greek yogurt (use your favorite brand & flavor)
- 1 1/2 c chopped fruit (of your choosing, I use strawberries & bananas)
- 1/2 c chopped nuts (of your choosing)
- 3/4 c granola (of your choosing)
- 1/4 c chocolate chips (optional)
Loaded Potato Bites

* Take potatoes out * Meanwhile shred the cheese, chop scallions, and cook bacon then dice finely
- 2 cups leftover mashed potatoes
- 2 tablespoons of flour
- 2/3 cup of shredded cheddar cheese
- 3 strips bacon, crmbled
- 1/3 cup scallions, chopped
- 1 egg
- 1 1/4 - 1 1/2 cups panko
- Oil for frying
- Salt and Pepper
- Ranch or Honey Mustard for dipping
Caramel Spiced Bread

* Preheat oven to 325°F. Grease and flour a 9“ x 5“ inch loaf pan
- 1/2 pkg. (4.5 oz.) Werther‘s Original Baking Caramels, unwrapped
- 3/4 cup softened butter, divided
- 1 medium apple
- 2 cups confectioners’ sugar
- 1 tbsp. vanilla extract
- 3 large eggs
- 2 1/4 cups all-purpose flour, divided
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 tsp. pumpkin pie spice
Buffalo Chicken Cupcakes

* Preheat oven to 375 degrees
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup Ranch or Blue Cheese dressing (your preference)
- 1/2 cup Buffalo wing sauce (Frank's is the brand I like)
- 1 cup shredded cheddar cheese, divided
- 1 1/2 cups cooked and shredded chicken
- 24 wonton wrappers (see Note)
- 1/4 cup blue cheese crumbles
Mexican Fried Ice Cream

* Place nine 3-in. scoops of ice cream on a baking sheet
- 1/2 gallon French vanilla ice cream, softened
- 3 cups crushed cornflakes
- 4 teaspoons ground cinnamon
- Oil for deep-fat frying
- Honey and whipped topping, optional
Homemade Febreze

~Preparation: * Using a funnel, pour fabric softener and baking soda into your spray bottle
- ~What you'll need:
- 1/8 Cup of fabric softener (use your favorite brand & scent)
- 2 tablespoons Baking Soda
- Hot tap water
- Spray bottle (I used my empty 27 oz. Febreze bottle)
Weight Watcher's Cabbage Soup

* Add all ingredints to slow cooker and cook on low for 6 hours
- 6 cups nonfat beef broth
- 4 garlic cloves, minced
- 2 cans diced tomatoes
- 4 cups chopped cabbage
- 1 cup chopped celery
- 1 yellow onion, chopped
- 1 cup chopped carrot
- 1 cup green beans
- 1 cup chopped zucchini
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon red pepper flakes
- salt & pepper, to taste
- Add in any vegetables you like for variation.
