Pineapple Orange Trifle

Guests are pleasantly surprised to see this lovely trifle on my holiday table
- 1 can (14 ounces) pineapple tidbits
- 2 cups cold 2% milk
- 2 packages (3.4 ounces each) instant vanilla pudding mix
- 1 cup (8 ounces) sour cream or greek yogurt
- 1 can (11 ounces) mandarin oranges, drained
- 1 prepared angel food cake (8 to 10 ounces), cut into 1-inch cubes
- 1 carton (8 ounces) frozen whipped topping, thawed
- 1/2 teaspoon orange extract
- 1/3 cup flaked coconut, toasted
Hash Brown Nests with Portobellos and Eggs

Hash browns make a fabulous crust for these individual egg quiches
- 3 cups frozen shredded hash brown potatoes, thawed
- 3 cups chopped fresh portobello mushrooms
- 1/4 cup chopped shallots
- 2 tablespoons butter
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons sour cream
- 1 tablespoon minced fresh basil
- Dash cayenne pepper
- 7 eggs, beaten
- 1/4 cup shredded Swiss cheese
- 2 bacon strips, cooked and crumbled
Pineapple chicken stir-fry

~For the marinade: * In a small bowl, whisk together the soy sauce, rice vinegar and ginger
- ~For the marinade:
- 1 teaspoon reduced-sodium soy sauce
- 1 teaspoon rice vinegar
- 1/2 teaspoon grated fresh ginger
- 1/2 pound boneless, skinless chicken breast cut into 1-inch cubes
- ~For the rice:
- 1 1/3 cups water
- 2/3 cup brown rice
- ~For the sauce:
- 1 teaspoon grated fresh ginger
- 3 tablespoons unsweetened pineapple juice
- 1 teaspoon rice vinegar
- 1 1/2 tablespoons reduced-sodium soy sauce
- 1 1/2 tablespoons cornstarch
- 2 garlic cloves, minced
- ~For the stir-fry:
- 1 tablespoon peanut oil, divided
- 1 small carrot, thinly sliced into diagonal strips
- 1 cup chopped red bell pepper, cut into 1/2-inch strips
- 1 cup chopped bok choy
- 1 cup unsweetened canned pineapple chunks
- 1/2 cup sliced green onion
- 1 cup snow peas

- 3/4 cup (1-1/2 sticks) butter, melted
- 1 1/2 cups all-purpose flour
- 1 cup chopped walnuts, divided
- 2 (4-serving) packages instant chocolate pudding mix
- 3 cups milk
- 12 ounces cream cheese, softened
- 1 cup confectioners' sugar
- 1 (16-ounce) container frozen whipped topping, thawed

- 1/2 teaspoon ground cinnamon

- 1-1/2 cups all-purpose flour
- 2 tablespoons packed brown sugar
- 1/2 teaspoon pumpkin pie spice
- 2 teaspoons baking powder
- 1 teaspoon salt

- 1-1/3 cups 2% milk
- 3/4 cup canned pumpkin
- 1/2 cup ricotta cheese

- 2 parts Pinnacle Pumpkin Pie vodka
- 1 part Kahlua
- 1 1/2 parts half & half
- 2 teaspoons cheesecake pudding mix
