Rigatoni and Cauliflower Gratin

- 1 medium cauliflower, in florets
- 1 Tbsp. butter
- 1 Tbsp. vegetable oil
- 2 onions, coarsely chopped
- 2 Tbsp. cornstarch
- 3 cups milk
- 1 3/4 cups freshly grated Parmesan
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. nutmeg
- 1/4 cup bread crumbs
- 2 Tbsp. finely chopped parsley
Quinoa Salad

- SALAD:
- 2 cups quinoa
- 2 cups water
- 1/4 tsp salt
- 1 star anise
- 1 tsp cumin
- 1 tsp cinnamon
- Half of a diced red pepper
- Half of a diced yellow pepper
- 1 cup dried cranberries
- 1 cup diced dried apricots
- 1 cup toasted nuts chopped, (pistachio and pine nuts)
- DRESSING:
- 1/2 cup of fresh orange juice
- 1/2 cup of olive oil
- Juice of half a lime
Beef Vindaloo

This is the recipe from Light of India restaurant
- 1/2 cup mustard oil
- 2 large onions, finely chopped
- 8 – 10 garlic cloves, minced
- 1 6-inch piece of ginger, finely minced
- 6 bay leaves
- 3 lbs. lean beef, cubed
- 8 whole cloves
- 6 cardamom pods, crushed
- 4 1-inch cinnamon sticks
- 1 1/2 Tbsp. tomato paste
- Juice of 1/2 lemon
- 2 1/2 tsp. turmeric
- 1 1/2 Tbsp. ground cumin
- 1 1/2 Tbsp. ground coriander
- 1 1/2 tsp. paprika
- 2 Tbsp. Indian chili powder
- 3 Tbsp. butter, melted
- 1 cup hot water
- 1 large potato, cut into 8 pieces
- S&P to taste
- 1/2 tsp. fresh chopped cilantro

- 2 1/2 cups coconut milk
- 3 Tbsp. red curry paste
- 3 Tbsp. fish sauce
- 2 Tbsp. brown sugar
- 2 stalks lemon grass, bruised
- 1 lb. rump steak, cut into thin strips
- 3 ounces roasted ground peanuts
- 2 fresh red chilies, sliced
- 5 kaffir lime leaves
- 10-15 Thai basil leaves

- 1 onion, diced
- 8 cups chopped fresh tomatoes (or 2 pint-sized cans of diced tomatoes, drained)
- 1 quart chicken broth
- salt, to taste
- 2 Tbsp. balsamic vinegar
- 1/2 tsp. honey
- 1/4 cup fresh chopped basil (about 15-20 leaves)
- 2 cups heavy cream
