- 4 cups chicken stock, divided
- 1 bay leaf
- 2 cups white rice
- 1 Tbsp. olive oil
- 1 lime, zested and juiced
- 1/2 tsp. salt
- 1 cup cilantro leaves
- 1 sack baby spinach (10 ounces)
- 4 green onions, coarsely chopped
Paella

In a large Dutch oven, brown chicken in olive oil
- 2 Tbsp. olive oil
- 1/2 lb. boneless chicken breast, cut into strips
- 1/2 lb. sausage, cut into chunks
- 2 cloves garlic, minced
- 1 large can diced tomatoes
- 2 cups chicken broth
- 3 cups water
- S&P to taste
- dash cayenne pepper
- 1/4 tsp. saffron or turmeric
- 2 cups uncooked rice
- 1 dozen clams, well scrubbed
- 1 dozen mussels, well scrubbed
- 1 lb. shrimp, peeled and deveined
- 2 red peppers, sliced and sautéed
- 1 cup frozen peas, thawed but not cooked
- parsley
- 1 can sliced black olives

Escargot and Orzo in Portobello

Seems complicated but it isn't
- Step 1:
- 3 cans escargot
- 3 Tbsp. butter
- 1 1/2 tsp. garlic, finely chopped
- 1 1/2 tsp. ginger, peeled and grated
- 1 Tbsp. crushed beef bouillon cube
- Fresh ground pepper
- Step 2:
- 1 cup orzo
- 1/3 cup garlic herb butter, divided
- Step 3, Goat's cheese sauce:
- 5 oz. soft unripened goat's cheese
- 1/2 tsp. crushed chicken bouillon cube
- 1/2 cup hot water
- Step 4:
- 4 large portobello caps, 4 1/2 inches diameter
- Step 5, Zesty Ginger Mayonnaise:
- 1 1/2 cups mayonnaise
- 2 Tbsp. ginger, peeled and grated
- 2 tsp. sugar
- 1/4 tsp. wasabi paste
- Step 6:
- 7 oz. fresh spinach leaves, stems removed
Standard Rolls

- 2 pkgs. yeast
- 1 cup lukewarm water with 2 tsp. sugar
- 2 cups milk
- 1 Tbsp. salt
- 1/4 cup sugar
- 1/3 cup shortening
- 8 cups flour
Chocolate Turtle Cheesecake

Yummy!! This make ahead dessert is not too difficult and will serve a large family gathering
- 1 cup finely chopped toasted pecans
- 2 Tbsp. butter, melted
- 3/4 cup plus 2 Tbsp. sugar, divided
- 32 KRAFT Caramels, chopped
- 3 Tbsp. milk
- 3 pkg. (250 g each) Philly Cream Cheese, softened
- 3 eggs
- 1 pkg. (8 squares) Baker's Semi-Sweet Chocolate, melted, cooled slightly
- 1/2 cup pecan halves, toasted
Indian Spiced Rice

Very tasty and healthy. Freezes well
- 1/2 cup dry lentils
- 1 medium potato, peeled and
- diced
- 1 Tbsp. canola oil
- 1 cup chopped onion
- 1 Tbsp. fresh ginger root,
- minced
- 2 cloves garlic, minced
- 3/4 tsp. ground coriander seed
- 3/4 tsp. cumin
- 3/4 tsp. garam masala
- 1/2 tsp. ground cardamom
- 1/4 tsp. ground nutmeg
- 1/4 tsp. cayenne
- 1 1/4 cups jasmine rice
- 2 cans onion soup and add water to make 3 1/2 cups
- 1/2 tsp. salt
- 1 red bell pepper, chopped
- 1/2 cup green peas/green onions
- 3 Tbsp. raisins
- 1 Tbsp. butter/margarine
Grandma's Rhubarb Cake

Really good. Very moist. Maybe a little more rhubarb
- topping:
- 1 1/2 cups brown sugar
- 1/2 cup margarine
- 1 egg, beaten
- 1 cup buttermilk
- 2 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt, if desired
- 1 tsp. vanilla
- 1 1/2 - 2 cups finely cut up rhubarb
- 1/2 cup white sugar
- 1/2 tsp. cinnamon
- 1/4 cup chopped walnuts or pecans

- 2 1/2 cups flour
- 1/2 cup sugar
- 1/2 tsp. salt
- 1 tsp. cream of tartar
- 1 tsp. baking soda
- 1/2 cup shortening
- 1 egg
- 1/2 cup raisins (if desired)
- 1 cup cream
- 1 egg for glaze

In a Dutch oven or soup kettle, cook beef and onion over medium heat until meat is no longer pink; drain
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 package (7-3/4 ounces) lasagna dinner mix
- 5 cups water
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 can (7 ounces) whole kernel corn, undrained
- 2 tablespoons grated Parmesan cheese
- 1 small zucchini, chopped
