Chocolate Raspberry Mascarpone Torte

Killer cake! Freezes well!
- CRUST:
- 1 1/2 cups chocolate cookie crumbs
- 1/2 cup sugar
- 1/4 cup melted butter
- FILLING:
- 1 tub (475 grams) Mascarpone cheese
- 1/2 cup whipping cream
- 1/4 cup granulated sugar
- 1 Tbsp freshly grated orange rind
- 1 tsp vanilla extract
- 1 Tbsp orange liqueur
- TOPPING:
- 2 1/2 pints raspberries, washed and dried gently
- with paper towel
Budhi's Beef Rendang

- Part A:
- 1/2 fresh coconut, finely grated
- 1/4 cup vegetable oil
- Part B:
- 5 stalks lemongrass, chopped
- 3 large onions, chopped
- 9 cloves garlic, chopped
- 1 1 1/2-inch piece of ginger, peeled and chopped
- 50 dried red chili peppers
- 1 1/2 cups water
- Part C:
- 2 Tbsp. salt
- 3 Tbsp. sugar

- 7 pieces dried galangal
- 10 lime leaves
- 3 turmeric leaves
- 50 dried red chili peppers
- 2 lbs. solid coconut cream
- 3 420-ml tins unsweetened coconut milk
- 1 kg. lean beef, cubed

Crab Cakes with Remoulade

- Remoulade:
- 2 lbs. russet potatoes, cut into 1-inch cubes
- 1 cup whole milk
- 2 garlic cloves, smashed
- 1/4 bunch fresh thyme sprigs
- 2 bay leaves
- 1/2 tsp. whole black peppercorns
- 1 lb. fresh jumbo lump crabmeat
- 2 tsp. salt
- 2 Tbsp. unsalted butter
- 1/2 bunch fresh chives, finely chopped
- 3 cups bread crumbs
- 5 Tbsp. vegetable oil, for frying
- Lemon slices, for garnish
- Green salad, as accompaniment
- 2 cups mayonnaise
- 1 tsp. Dijon mustard
- 2 Tbsp. cornichons or sour gherkins, minced
- 3 Tbsp. capers, minced
- 1 garlic clove, minced
- 2 Tbsp. chopped parsley leaves
- 1 Tbsp. chopped tarragon leaves
- 1 1/2 anchovies, minced
- Several dashes hot pepper sauce

Mix corn syrup, brown sugar, flour and dry mustard together
- 1/2 cup corn syrup or honey
- 1 cup brown sugar
- 2 Tbsp. flour
- 2 Tbsp. dry mustard
- 2 Tbsp. vinegar
Salmon Spread

- 1 can wild Sockeye salmon (no substitution)
- 1 small pkg. cream cheese
- 1 small onion, finely chopped
- 1 tsp. Worcestershire sauce
- 1/2 tsp. lemon juice
- a few shakes of Louisiana hot sauce
Unlikely Soup

Hey, this is really good.
- 1 28-ounce can Habitant Pea Soup (no ham)
- 1 19-ounce can cream of mushroom soup
- 1 19-ounce can cream of tomato soup
- 2 cans crab meat (drained)
- 1 cup half and half
- milk for thickening or thinning
- pepper to taste
- Tabasco to taste
Albert's Crap Dip

- 4 250-gm pkgs. cream cheese, softened
- 1/2 to 1 kilo crab flavoured pollock
- 4 Tbsp. cognac (to taste)
- 1 tsp. garlic powder
- mayonnaise/yogurt/sour cream to smooth mix
- slivered almonds
