Baked Artichoke Dip

- 2 cups mayonnaise
- 2 cloves crushed garlic
- 2 cups grated Parmesan
- 2 6 oz. jars marinated artichokes
- 1 dash Worcestershire sauce
- Dash cayenne pepper
- 1 tsp. dried parsley
Southwestern Beef Stew

Dry beef in paper towel. In a stock pot or Dutch oven, brown beef in batches in canola oil
- 2 lbs. stewing beef
- Canola or vegetable oil
- 4 onions, peeled and sliced
- 10 cloves garlic, sliced
- 1 yellow pepper, cut into 1-inch pieces
- 1 red pepper, cut into 1-inch pieces
- 1 jalapeno, seeded and minced
- 3 Tbsp. cumin
- 2 Tbsp. chili powder
- 1 can whole tomatoes
- 1 can pinto/red/black beans, drained and rinsed
- 2 cups frozen corn.
- 1 bunch cilantro, chopped
Ginger Tuna Kabobs

In a large resealable plastic bag, combine soy sauce and vinegar; add the tuna
- 1/4 cup soy sauce
- 2 Tbsp. rice vinegar
- 1 lb. tuna steaks, cut into 16 cubes
- 1 Tbsp. sesame seeds
- 1 Tbsp. pepper
- 2 Tbsp. canola oil
- 16 pickled ginger slices
- 1 bunch watercress, optional
- 1/2 cup wasabi mayonnaise

- SALAD:
- 4 cups cooked macaroni
- 2 Tbsp. olive oil
- 1/2 tsp. celery salt

- 1/2 tsp. onion salt
- 1/2 tsp. thyme
- 3/4 cup celery, chopped
- 3/4 cup green pepper, chopped
