Sunshine Salad

Great sweet salad that is perfect as dessert at a barbeque
- 2 cups little coloured marshmallows
- 1 small tin mandarin oranges, drained
- 1 small tin pineapple tidbits, drained
- 1 small pkg. semi-sweet coconut
- 1 small container sour cream
- 1/2 cup maraschino cherries, cut in half
Nicki's Mexican Rice

To make a more tomato flavoured rice, add more tomato paste
- 2 cups chicken broth
- 1 cup rice
- 1 Tbsp. vegetable oil
- 1 medium onion, finely chopped
- 1/2 green pepper, finely chopped
- 1 tsp. paprika
- 1 tsp. salad herbs
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 tomato, finely chopped
- 1 tomato paste
- 1/2 cup chopped fresh parsley
