Asparagus Risotto

- 4 c veg or chicken broth
- 2 T olive oil
- 4 green onions, chopped
- 1 c arborio or sushi rice
- 2 lbs asparagus, trimmed, cut in 2" pieces
- 2 T unsalted butter
- 1/2 c grated parmesan cheese
French Onion Soup

- 4 marrow bones
- Olive Oil
- 2 boxes beef broth
- Fresh Thyme, Parsley
- 2 cloves garlic
- Beef Concentrate
- Salt and Pepper
- 3 lbs Onions sliced
- Fresh Thyme
- Butter
- Crusty bread
- Cheese
Pasta Cubana

Heat oil in skillet over med-high heat
- 2 T olive oil
- 1 lb boneless skinless chicken, cut in bitesize pieces
- 1/4 t salt
- 1/8 t pepper
- 1/12 c mild slasa
- 1 16-oz can black beans, rinsed & drained
- 1 1/2 t ground cumin
- 2 medium zucchini, trimmed & sliced into 1/4" moons
- 1 clove garlic, minced
- 1 lb pasta, cooked & drained
Crab Rangoon

Heat oil in large heavy saucepan to 375
- 1 qt oil for deep frying
- 2 8-oz pkg cream cheese, softened
- 1 12-oz pkg imitation crabmeat
- 2 T soy sauce
- 2 t sesame oil
- 1 T minced garlic
- 3 T Worcestershire
- 1 bunch green onions, finely chopped
- 1 14-oz pkg wonton wrappers
- 2 egg whites
Lasagna Soup

- 1 1/2 lb bulk italian sausage
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 2 t oregano
- 1/2 t red pepper flakes
- 2 T tomato paste
- 1 28-oz can diced tomatoes
- 6 c chicken broth
- 2 bay leaves
- 8 oz fusilli pasta
- 1/2 c finely chopped basil
- 8 oz ricotta
- 1/2 c grated parmesan cheese
- 1/4 t salt
- pinch pepper
- 2 c shredded mozzarella

- 2 teaspoons vanilla
