Ingredients

    T olive oil

  • 1

    lb boneless skinless chicken, cut in bitesize pieces

  • ¼

    t salt

  • t pepper

  • 1/12

    c mild slasa

  • 1

    16-oz can black beans, rinsed & drained

  • t ground cumin

  • 2

    medium zucchini, trimmed & sliced into ¼" moons

  • 1

    clove garlic, minced

  • 1

    lb pasta, cooked & drained

Directions

Heat oil in skillet over med-high heat. Season chicken with salt/pepper. Add to skilleet & cook til lightly browned. Stir in salsa, beans and cumin. Simmer covered for 10 minutes. Add zucchini and garlic, simmer 5 min more. Toss with pasta; serve immediately.
