Brown and drain fat from ground pork, beef and sausage
- 2 large cans crushed tomatoes
- 1 29 oz can crushed tomatoes
- 1 29 oz can tomato sauce
- 1 can diced tomatoes
- 2 small cans tomatoe paste
- 1 large bottle V8
- 14 cloves garlic
- 1 small pepper
- 4 onions
- 2 carrots
- 2 stalks celery
- 1 lb ground pork
- 3 lb ground beef
- 1 lb sweet italian sausage
- salt/pepper to taste
- Red Pepper flakes, to taste
- fresh herbs-cilantro, oregano, basil
Carolina Porch Pork Tenderloin

- 1 pork tenderloin
- 1 Rome apple, sliced
- 1/2 c frozen corn
- 6 slices bacon
- Essence of Emeril
- Maple syrup
- Rosemary-optional
Dewey's Oyster Fritters

- 1/4 teaspoon baking powder
- 1 small can evaporated milk
- 1-2 eggs
- 1 pint oysters, drained, reserve liquid
- 1/4 cup oil
- Salt/pepper to taste
Mushroom Chili

A quick dinner idea
- 2 T oil
- 1 c chopped onion
- 2 T chili powder
- 1 T minced garlic
- 2 t cumin
- 1 1/2 pounds white mushrooms, sliced
- 8 oz shitake or other mushroom, sliced
- 1 14.5 oz can stewed tomatos
- 1 19 oz can white kidney beans, rinsed & drained
- 1/2 c ripe olives, sliced
- 1/2 c water

- 2/3 c milk
- 1/2 c shredded cheddar
- 1/4 c butter or margerine, melted

Got this recipe from a local restaurant's cooking class
- 1 lb ground beef
- 1/2 lb ground veal (may sub beef also)
- 1/2 lb ground pork
- 2 cloves garlic, minced
- 2 eggs
- 1 c romano cheese, freshly grated
- 2 c stale italian bread, crumbled
- 1 1/2 c lukewarm water
- 1 c olive oil, divided
- salt & pepper to taste
Pecan Cream Cheese Pie

- Filling:
- 1 8-oz cream cheese, softened
- 1/2 cup sugar
- 1 egg
- 1/2 t salt
- 1 t vanilla
- 1 c chopped pecans
- 1 unbaked 10" pie crust
- Topping:
- 1/2 c sugar
- 1 c corn syrup
- 1 t vanilla
Banana Bread

Sift flour; measure. Add baking powder, soda and salt; sift again
- 1 3/4 cups flour
- 1 1/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1/3 cup shortening
- 2/3 cups sugar
- 2 eggs, slightly beaten
- 1 cup mashed banana, about 2-3 bananas

- 1 3/4 c fresh breadcrumbs from crustless french bread
