Shari's Meatloaf

Shari really liked this because there is no oatmeal or bread in this recipe--she always enjoyed this
- 2 lbs lean ground beef
- 1 envelope onjon soup mix
- 2/3 cup milk
- 1 egg OR 1/3 cup Egg Beaters
- Topping: 3 TBSP brown sugar
- 3 TBSP catsup
- 1 TBSP mustard--may use honey mustard or regular mustard
Applesauce Cake

- 1/2 cup shortening (Crisco oil works fine)
- 2 cups sugar
- 2 1/2 cups sifted flour
- 1/4 tsp salt
- 1 egg, beaten
- 1 1/2 cups applesauce
- 1 cup boiling water (? 1/2 cup)
- 1/2 cup nuts
- 1 cup raisins
- 2 tsp baking soda
- Cinnamon and nutmeg to taste

- 2 T sugar
- 2 t salt
- 2 T shortening
- 1 pkg yeast
- 1/2 c warm water

- 1 pkg choc cake mix
- 1 sm pkg instant choc pudding mix
- 1/2 c international coffee, any flavor
- 4 eggs
- 1 8-oz sour cream
- 1/2 c veg oil
- 1/2 c water

Preheat oven to 375. In large mixing bowl, beat shortening and sugar until fluffy
- 1 c shortening
- 1 1/2 c sugar
- 3 eggs
- 3 c unsifted flour
- 1 t baking soda
- 1/2 t salt
- 1 9oz package None Such Condensed Mincemeat, crumbled
Lemon-Cream Cheese Cupcakes

- Cake:
- 1 pkg white cake mix
- 1 3.4-oz instant lemon pudding
- 1 c water
- 4 egg whites
- 2 T oil
- Icing:
- 1 8-oz cream cheese, softened
- 1/4 c butter, softened
- 2 T lemon juice
- 1 16-oz pkg powdered sugar
Asparagus Risotto

In small saucepan, bring broth to a simmer
- 4 c vegetable or chicken broth
- 2 Tbs olive oil
- 4 green onions, chopped
- 1 c Arborio rice
- 2 lbs asparagus-2" pieces
- 2 Tbs butter
- 1/2 c grated parmesan cheese
Big Fish Mashers

- 5 lb red skin potatoes, boiled, whole (20 lb)
- 1 stick margerine (1 lb)
- 2 sticks unsalted butter (2 lb)
- 2 T fresh basil, chopped (1/2 c)
- 1 1/4 oz blackening spice (5 oz)
- 1 c half & half (1 qt)

- 1 teaspoon vanilla

- 3 1/2 cups milk, or 2 cups 1/2 & 1/2 and 1 1/2 cup milk
