- 1 yellow cake mix, prepared as directed
- 1 1/2 cups milk
- 1/2 cup sugar
- 2 cups coconut
- 1 8 oz containter Cool Whip, thawed
Slow Cooker Pizza Casserole

1 cup=19 g fat, 16 g carb, 2 g fiber, 22 g protein
- 16 oz rigatoni or large tube pasta
- 1 1/2 lb ground beef
- 1 sm onion, chopped
- 4 c shredded part-skim mozzarella
- 2 15-oz cans pizza sauce
- 1 10.75 oz can condensed cream of mushroom soup
- 8 oz sliced pepperoni

I found this recipe a few years ago in a Good Housekeeping article on Paula Deen
- Cake:
- 1 cup butter, softened
- 2 cups sugar
- 4 large eggs
- 3 cups sifted self-rising flour
- 1 cup canned coconut MILK, well-stirred
- 1 teaspoon vanilla
- Filling:
- 3/4 cup sugar
- 1 cup sour cream
- 4 tablespoons milk
- 1/2 cup coconut
- Frosting:
- 1 1/2 cup sugar
- 1/3 cup water
- 1/4 teaspoon cream of tartar OR
- 1 tablespoon light corn syrup
- 1/8 teaspoon salt
- 2 large egg whites
- 1 1/2 teaspoons vanilla
Two Mushroom and Bean Chili

In large saucepan, heat oil until hot
- 2 T Veg Oil
- 1 cup chopped onion
- 1 T minced onion
- 2 T chili powder
- 1 t ground cumin
- 1 1/2 pounds fresh white mushrooms, sliced
- 8 oz fresh shitake mushrooms, sliced (2 1/2 c)
- 14.5 oz can stewed tomatoes
- 19 oz can white kidney beans, rinsed & drained
- 1/2 c sliced ripe olives
- 1/2 c water (or broth)
Fuzzy Navel Cake

I usually double the glaze-makes for a much moister and tastier cake
- Cake:
- 1 bx yellow cake mix
- 1/2 c orange juice
- 1/2 t orange extract
- 1/2 c vegetble oil
- 4 eggs
- 3/4 c Peach Schnapps
- 1 5-oz pack instant vanilla pudding
- Glaze:
- 4 T schnapps
- 1/3 c confectioners sugar
- 2 T oj
Southwest Black Bean Soup

Heat oil in Dutch oven over medium heat
- 2 Tbs vegetable oil
- 1 large onion, chopped (1 cup)
- 4 cloves garlic, finely chopped
- 1 pound dried black beans
- 2 cups cubed fully cooked smoked ham/turkey
- 6 cups chicken broth
- 2 tablspoons ground red chilies-adjust to taste
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon dried oregano
- 2 teaspoons ground cumin
- 1 can, 28 oz, whole tomatoes, drained
- 1 canned chipotle chile in adobo sauce
- Creme fraiche, if desired
- Chopped red bell pepper, if desired

- 1/4 cup melted butter
- 1/3 cup sugar
- 2 cup baking mix
Homemade Ice Cream

I garnered this recipe from a patient years ago
- Basic Ingredients:
- 1 qt half & half
- 3 pints heavy whipping cream
- 2 cans PET milk
- 3-4 c sugar
- Add ins:
- 2 cans curshed pineapple or,
- 2 cans peaches, mashed into small pieces or,
- 2 qts fresh strawberries, sliced and sugared to taste, or
- choc syrup to taste
- when freezer stops, add nuts or broken candy bars
- peanut butter softened in microwave added to choc ice cream before freezing
- Any other combo you like
Crab Salad in Crisp Wonton Cups

Preheat oven to 375. Wonton: Brush both sides wonton with canola
- Wonton Cups:
- Cooking Spray
- 18 wonton wrappers
- 2 t canola
- 1/4 t salt
- Dressing:
- 2 T fresh lime juice
- 1 t lime zest
- 1/4 t salt
- 1/8 t black pepper
- 1/2 t red pepper flakes
- 2 T olive oil
- Salad:
- 1/2 lb lump crab
- 1 stalk celery, finely diced (1/4 c)
- 1/2 c peeled, finely diced ripe mango
- 1/4 c thinly sliced scallions (white & green)
- 2 T coarsely chopped cilantro
Big Fish Pumpkin Pie

- 1 c pumpkin puree
- 3/4 c light brown sugar
- 3 eggs
- 1/2 stick unsalted butter, melted
- 2 T dark molasses
- 2 T Jim Bean
- 1/2 t vanilla
- 1 1/2 t cinnamon
- 1 t allspice
- 1/4 t ginger
- 1/4 t salt
- 1 t nutmeg
