Ingredients
- 2 T oil
- 1 c chopped onion
- 2 T chili powder
- 1 T minced garlic
- 2 t cumin
- 1 1/2 pounds white mushrooms, sliced
- 8 oz shitake or other mushroom, sliced
- 1 14.5 oz can stewed tomatos
- 1 19 oz can white kidney beans, rinsed & drained
- 1/2 c ripe olives, sliced
- 1/2 c water

Preparation
Step 1
Heat oil in large pan til hot. Add onion and garlic; cook til tender, about 5 min.
Stir in spices & cook til fragrant, about 30 seconds.
Add mushrooms & cook til tender-crisp, about 6-8 min.
Add remaining ingredients; simmer uncovered for 10 minutes.
