Ingredients

  • 2 T oil
  • 1 c chopped onion
  • 2 T chili powder
  • 1 T minced garlic
  • 2 t cumin
  • 1 1/2 pounds white mushrooms, sliced
  • 8 oz shitake or other mushroom, sliced
  • 1 14.5 oz can stewed tomatos
  • 1 19 oz can white kidney beans, rinsed & drained
  • 1/2 c ripe olives, sliced
  • 1/2 c water

Preparation

Step 1

Heat oil in large pan til hot. Add onion and garlic; cook til tender, about 5 min.

Stir in spices & cook til fragrant, about 30 seconds.

Add mushrooms & cook til tender-crisp, about 6-8 min.

Add remaining ingredients; simmer uncovered for 10 minutes.
