Carolina Porch Pork Tenderloin

Stumbled across the Carolina Porch restaurant years ago off I-95 in South Carolina. It was a horrible rainy night and the restaurant was close to the hotel for us. Loved this so much we stopped on our way back from Florida and this is my attempt at replicating it. The restaurant, sadly, is no longer there.

Ingredients

  • 1 pork tenderloin
  • 1 Rome apple, sliced
  • 1/2 c frozen corn
  • 6 slices bacon
  • Essence of Emeril
  • Maple syrup
  • Rosemary-optional

Preparation

Step 1

Dust tenderloin with Essence. Layer 1/2 sliced apples on pork. Layer with 1/2 bacon. Dust with Essence. Pour 3-4 T syrup over pork. Bake at 350 until done.

Brown remaining bacon; add apple and cook until tender. Add corn and heat thru. Place in bowl and add 3-4 T syrup.

When pork is done, let rest 10 min before cutting. Deglaze pan and add to apple relish. Slice pork and dress with relish.
Serve with mashed potatoes, gravy.
