Shrimp Mold

Saute margarine, onion, celery and bell pepper
- 1/2 stick margarine
- onion, chopped
- 1 stalk celery, chopped
- 1/4 bell pepper, chopped
- 1 lb. shrimp, chopped
- 1 can tomato soup
- 3 oz. cream cheese
- 1/2 c. mayo
- 1/2 c. water
- 2 packages Knox gelatin
Oven Crawfish Rice Dressing Casserole

In large skillet, add oil
- 2 lb. ground beef
- 1 10 oz. can cream of mushroom soup, undiluted
- 1 10 oz can French onion soup
- 1 6 oz can mushroom steak sauce
- 1/2 c. celery, chopped
- 1/2 c bell pepper, chopped
- 1/2 c. green onion, chopped
- 1/2 c. parsley, chopped
- 1 4 oz can pimento, drained
- 1 cup raw rice
- 1 lb. crawfish or shrimp
- 1 T oil
- Cajun seasoning to taste
- 1 lb. pork sausage
Spinach Dip

Iin medium bowl, stir spinach, sour cream, mayo, soup mix, water chestnuts and green onions until well mixed
- 1 10 oz. package frozen chopped spinach, thawed and drained
- 1 16 oz container sour cream
- 1 c. mayo
- 1 package Knorr vegetable soup & recipe mix
- 1 8 oz can water chestnuts, chopped
- 3 green onions, chopped
Chicken Tortilla Soup

Heat oil in a large pot over medium heat and add onion and garlic
- 1 T. oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 t. cumin
- 2 t. dried oregano
- 1 t. salt
- 3 15 oz. cans cannellini beans, separated
- 2 10 cans Rotel
- 1 15 oz. can cream corn
- 1 15 oz. can whole kernel corn
- 1 15 oz can black beans
- 1 rotisserie chicken, shredded
- juice of 1 limie
- tortilla strips or chips as garnish
Potluck Meatballs

In a bowl, combine first six ingredients; add beef and mix well
- 1 egg, beaten
- 2/3 c. soft bread crumbs
- 1/2 c.grated onions
- 1 t. salt
- 1/2 t. allspice
- 1/4 t. pepper
- 1 lb. ground beef
- 1 T. cornstarch
- 1 can condensed beef consomme
Hawaiian Ham & Swiss Sliders

Cut rolls into half and spread mayo onto 1 side of the rolls
- 24 slices of deli honey ham
- 6 slices of swiss cheese, cut into fourths
- 1/3 c. mayo
- 1 T. poppy seeds
- 1 1/2 T Dijon mustard
- 1/2 c. butter melted
- 1 T onion powder
- 1/2 t worchestershie sauce
- 2 packages (12 count) King's Hawaiian Original Hawaiian Sweet Dinner Rolls

- 1 large onion, chopped fine
- 2 poblano chilies, seeded, chopped fine
- 1 jalapeno pepper, seeded, minced
- 1 1/2 T chili powder
- 2 T. ground cumin
- 4 large clove garlic, chopped
- 1 7 oz. can fire roasted, peeled, chopped green chilis, undrained
- 2 14 oz. cans fire roasted diced tomatoes, undrained
- 1 28 oz. can crushed tomatoes
- 1 lb. Camelia Brand Black Beans, rinsed and sorted
- 6-8 cups beef broth
- salt to taste
- Shredded cheese and sour cream for toppings
Old Fashioned Coconut Cream Pie

Preheat oven to 350 degrees
- 1 cup sweetened flaked coconut
- 3 cups half and half
- 2 eggs, beaten
- 3/4 cup white sugar
- 1/2 cup all purpose flour
- 1/4 t salt
- 1 t. vanilla extract
- 1 9 inch pie shell, baked
- 1 c. frozen whipped topping, thawed
Pork Tenderloin

Wrap the tenderloin pieces in bacon
- 3 lbs. pork tenderloin ( 1 pkg of 2 tenderloins), cut into 4 pieces
- 1 lb. bacon
- 3/4 c soy sauce
- 1 T. minced onion
- 1/2 t. garlic salt
- 1 T wine vinegae or white vinegar
- 1/4 t. salt
- 1 dash pepper
- 3/4 c. brown sugar
Creamed Spinach with Spiced Bread Crumbs

- 2 lb. fresh spinach
- 8 T. unsalted butter
- 1/2 c. fresh bread crumbs
- 1/4 t. paprika
- Kosher sale and fresly ground black pepper, to taste
- 3 cloves garlic, minced
- 1 large shallot, minced
- 1 T flour
- 1 1/2 c. milk
- 1/3 c. sour cream
- 1/4 c. grated parmesan
- 2 T fresh lemon juice
- 1/4 t. freshly grate nutmeg
