Chicken Enchiladas

Spread about 2 tablespoons beans on each tortilla
- 1 16 oz can refried beans
- 10 flour tortillas (6-8 inch)
- 1 can cream of chicken soup
- 1 8 oz sour cream
- 3-4 c. cubed cooked chicken
- 3 c. (12 oz) shredded cheddar cheese
- 1 15 oz can enchilada sauce
- 1/4 c. sliced green onions
- 1/4 c. sliced ripe olives
Praline Apple Bread

1. Preheat oven at 350 degrees
- 1 1/2 c chopped pecans, divided
- 1 8 oz container sour cream
- 1 c. sugar
- 2 large eggs
- 1 T vanilla extract
- 2 c flour
- 2 t. baking powder
- 1/2 t baking soda
- 1 t. cinnamon
- 1/2 t. salt
- 1 1/2 c. finely chopped, peeled Granny Smith apples (about 3/4 lb.)
- 1/2 c. butter
- 1/2 c. firmly packed light brown sugar
Parmesan Creamed Spinach

Microwave spinach in a large bowl for 4-5 minutes
- 1 lb. baby spinach
- 1/2 c. unsalted butter
- 1 large shallot, chopped or 1/3 c. chopped red onion
- 1 bay leaf
- 1 tsp salt
- 1/4 tsp nutmeg
- 1/4 c. flour
- 2 c. milk
- 1 c. grated parmesan cheese

- Eggs, oil and water called for on brownie box
- 1 box Betty Crocker family size fudge brownie mix (9x13 pan)
- 7 sheets honey graham crackers
- cooking nonstick spray
- 2 cups mini marshmallows
Orange Mandarin Cake

Pout cake mix in a large bowl
- Frosting:
- 1 box yellow cake mix
- 1 small box instant vanilla pudding
- 1 t. baking powder
- 1 c. oil
- 4 eggs, beaten
- 1 t. vanilla
- 1 10 oz can mandarin orange sections
- 1 20 oz can crushed pineapple
- 1 small box instant vanilla pudding
- 1 9 oz Cool Whip
Chocolate Chip Cookies

Combine flour, baking soda and salt in small bowl
- 2 1/4 c. flour
- 1 t. baking soda
- 1 t. salt
- 1 c (2 sticks) butter
- 3/4 c. sugar
- 3/4 c. brown sugar
- 1 t. vanilla
- 2 eggs
- 2 c. chocolate chips
- 1 c. chopped nuts
Corn Casserole

Combine all ingredients and pour into a greased casserole dish
- 1 can whole kernel corn, drained
- 1 can creamed corn
- 2 eggs beaten
- 1 stick butter, melted
- 4 heaping T all purpose flour
- 2 T sugar
- 1/4 c. diced green pepper
- 1 c. whole milk
- 1/2 c. shredded cheddar cheese
- 1/4 t. each salt and pepper
Luscious Lemon Delight

Combine crust ingredients and press into a 9 x 13 baking dish
- Crust:
- 1 cup flour
- 1/2 cup ground or finely chopped pecans
- 1/4 cup melted butter
- Layers:
- 8 oz cream cheese, softened
- 2.5 cups Cool Whip, thawed
- 2 99 g packages instant lemon pudding
- 1 T lemon juice
- 3 cups milk
- 1 cup icing sugar
- 3 T. finely chopped pecans
Chocolate Oreo Peanut Butter Dream Pudding

1. Lightly grease a 13 x 9 inch pan with nonstick spray
- 1 package (14.3 oz. Oreo cookies
- 6 T unsalted butter, melted
- 3/4 c. creamy peanut butter
- 1 c. powered sugar
- 8 oz. cream cheese, at room temperature
- 16 oz. Cool Whip
- 1 large (5.9 oz.) package instant chocolate pudding mix
- 1 cups milk
- 2 Butterfinger candy bars, chopped
