Blueberry Lemon Cake

1. Preheat oven to 375 degrees
- 2 large eggs
- 1 c. granulated sugar
- 1 c. sour cream (8 oz.)
- 1/2 c. light olive oil or vegetable oil
- 1 t. vanilla extract
- 1/4 t. salt
- 2 c. all purpose flour
- 2 t. baking powder
- 1 medium lemon zest and juice, divided
- 1/2 t. corn starch
- 16 oz. fresh blueberries
- powdered sugar to dust the top
Spicy Grilled Pork Tenderloin with Blackberry Sauce

Preheat grill to 350 to 400 degrees
- 1/4 lb pork tenderloins
- 1 T olive oil
- 1 1/2 T Caribbean jerk seasoning
- 1 t. salt
- 2/3 c. seedless blackberry preserves
- 1/4 c. Dijon mustard
- 2 T rum or orange juice
- 1 T orange zest
- 1 T grated fresh ginger
Chicken Tortilla Soup

Preheat oven to 375 degrees
- FOR THE GARNISHES:
- 2 whole boneless, skinless chicken breasts
- 1 T. olive oil
- 1 1/2 t. cumin
- 1 t. chili powder
- 1/2 t. garlic powder
- 1/2 t. salt
- 1 T. olive oil
- 1 c. diced onion
- 1/4 c. diced green bell pepper
- 1/4 c. red bell pepper
- 3 cloves garlic, minced
- 1 10 oz can rotel
- 32 ounces chicken stock
- 3 T. tomato paste
- 4 c. hot water
- 2 15 oz. cans black beans, drained
- 3 T. cornmean
- 5 whole corn tortillas, cut into uniform strips around 2-3 inches
- sour cream
- diced advocado
- diced red onion
- salsa
- grated cheese
Oatmeal Cookies

Combine crisco, brown sugar, egg, milk and vanilla in large bowl
- 3/4 c butter flavor Crisco
- 1 1/4 c. light brown sugar
- 1 egg
- 1/3 c. milk
- 1 1/2 t. vanilla
- 3 c. quick oats, uncooked
- 1 c. flour
- 1/2 t. baking soda
- 1/2 t. salt
- 1/4 t. cinnamon
- 1 c. raisins
- 1 c. pecans
Strawberry Pie

Combine water, sugar, syrup and cornstarch in a saucepan
- 1 1/2 - 2 pints strawberries
- 1 c water
- 1 c sugar
- 1 T karo
- 2 T cornstarch
- 3 T strawberry jello
- 1 8 inch pie shell
- Cool Whip
Broccoli Patties

Mix all the ingredients together in a large bowl
- 16 oz. package of frozen chopped broccoli, thawed and drained of liquid (I used fresh steamed broccoli)
- 1 1/2 cup of grated cheddar cheese
- 3 eggs
- 1 cup of seasoned Italian breadcrumbs
Crab Au Gratin

Saute onion and bell pepper in butter
- 1 small onion, chopped
- 1/2 c. butter
- 1/2 of 12 oz can of evaportated milk
- 3 c. crab meat
- 1/2 c. grated cheese
- 1/4 c. bell pepper
- 3 T flour
- seasoning to taste
Chicken and Cheese Quesadillas

In a medium bowl, combine chicken, cheese, cream cheese and salsa
- 1-2 cooked chicken breasts, chopped
- 1 8 oz package shredded Colby Jack cheese blend
- 4 oz cream cheese, softened
- 1/4 c. prepared salsa
- 8 8 inch flour tortillas
- 1/4 c. butter, softened
- Garnish: chopped onion, chopped tomato, chopped fresh jalepeno
Lemon Meringue Pie

Preheat the oven to 350 degrees
- 1 cup plus 6 T. sugar
- 1/4 c. cornstarch
- 1/4 t. salt
- 1 1/2 c. boiling water
- 2 t. grated lemon rind
- 1/3 c. fresh lemon juice
- 3 large eggs, separated
- 1 T butter
- 1 8 0r 9 inch pie shell
Granny's Mac & Cheese

Boil macaroni, according to directions on the package, place in a colander and rinse with cold water after cooking
- 1 8 oz bag Luxury quick cook elbow macaroni
- 1 5 oz can Pet milk
- 1 5 oz regular milk
- 1 lb. Velveeta cheese
- 1/2 stick butter
- 2 large eggs
