Captain Rodney's Cheese Bake

Mix mayonnaise, cream cheese, cheddar cheese and onions and place in a greased quiche pan
- 1/2 cup mayonnaise
- 1 (8 oz.) block cream cheese, softened
- 1 cup grated cheddar cheese (or a little more)
- 2 chopped green onions
- 6 Ritz Crackers, crushed
- 8 slices bacon, cooked and crumbled (or store-bought bacon pieces)
- 1/2 cup Captain Rodney's Boucan Glaze
Corn Soufflé

Mix all. Bake 350º for 30 min in 8x8 pan
- 1 can creamed corn
- 1 box or pkg cornbread mix (Martha White, etc.)
- 1 (8 oz.) carton sour cream
- 1/2 cup oil
- 2 eggs, beaten
Tomato Sandwiches

Mix first three ingredients well and spread on rounds of white bread that have been cut to fit Roma tomato slices
- 16 oz. cream cheese, softened
- 1 pkg. ranch dip or dressing mix
- 1/4 to 1/2 cup mayonnaise
- white bread
- Roma tomato
- lemon pepper
- dried basil
Baked Chicken Salad

combine all ingredients except cheese and chips
- 2 cups cooked chicken breasts, cubed
- 1 cup thinly sliced celery
- 1/2 tsp salt
- 1/2 cup toasted almond slivers
- 1 tsp. grated onion
- 1 cup mayonnaise
- 2 tsp lemon juice
- 1/2 cup chicken broth
- 1 cup crushed potato chips
Barbecued Shrimp

Remove heads from shrimp; do not peel
- 5 lbs shrimp
- 1 onion, sliced
- 1 1/2 cups (3 sticks) butter or margarine sliced
- 1 large bottle Italian dressing
- juice of 2 lemons
- 3 Tbsp black pepper
Blueberry Muffins

Combine dry ingredients in large mixing bowl
- 2 cups flour
- 1 Tbsp. baking powder
- 3/4 cup sugar
- pinch of salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1 egg beaten
- 1 cup fresh or frozen blueberries
Jennifer's Cheese Grits

Bring water to boil -- add grits
- 1 1/2 cup grits (quick grits, not instant)
- 3 eggs, beaten
- 6 cups water
- 1 1b Velveeta
- 1 1/2 sticks butter
- 2 tsp salt
- garlic powder to taste
Cereal Mix

Heat oven to 250º. Melt oleo over low heat
- 6 Tbsp oleo
- 6 tsp worcestershire sauce
- 1 tsp seasoned salt
- 2 cups Rice Chex
- 2 cups Cheerios
- 2 Cups pretzel sticks
- 1 cup pecans
- 3/4 tsp. onion powder
- 3/4 tsp. salt
Chicken Enchiladas by Mary Lee Steele

Boil chicken and debone it
- 3-4 chicken breasts
- 2 cans cream of chicken soup
- 2 small cans chopped green chilies, mild
- 16 oz. sour cream
- 1 finely chopped onion, optional
- 1 large block of cheddar cheese, grated (8-10 oz.)
- salt and pepper to taste
- 16 flour tortillas (small-medium)

- 2 1/2 jars Prego (2 lg, 1 sm)
- 15 oz. ricotta cheese

- 12 oz. sliced mozzarella
- Parmesan cheese
- garlic powder
- oregano
- salt
- pepper
- 1-2 lb. ground meat
